    Soft Idiyappam Recipe | Nool Puttu (String Hoppers)

    Learn how to make soft, fluffy Idiyappam, also known as Nool Puttu or String Hoppers.
    This traditional South Indian breakfast dish is made with rice flour and steamed to perfection.

    How do I make Idiyappam soft and non-sticky?

    Use fine rice flour, add sesame oil while kneading, and steam immediately after pressing. Avoid overcooking.

    Water

    The amount of water may vary depending on the type of rice flour and its texture. Start with a 1:1 ratio and drizzle extra if needed.

    The dough should be pliable. If sticky, sprinkle rice flour. If dry, drizzle hot water and knead.

    Should I Rest the Dough?

    Yes, rest for 10 minutes. Avoid pressing when it is piping hot.

    Store freshly steamed Idiyappam in a hot pack or an airtight container. Cover with a damp cloth to retain moisture.
