Instant Mango Shrikand is a quick dessert prepared with mangoes and sour cream. Traditional shrikand is prepared with hung curd. Tasty dessert can be prepared within 5 minutes. No whisking - with just a mixie blender, this is one of simplest dessert with mangoes.
February is almost over but I still have two more dessert recipes pending to post. When I started “Sweet February” I wanted to post Mango Shrikand initially, but then I thought February is too early for a mango recipe so I decided to postpone this post for coming summer. Off-late I started seeing mangoes in shops, yes may be it is time for a mango pudding😋
You must have known my addiction for mangoes based on the mango-based recipes I have posted in TMF. This Aamrakhand is my son’s recent favorite. I should say a bakery near home made him addicted for this dessert.
They have a Mango pudding, which is his default order every time we go there. They serve it with some raw mango topping. It will be thick and rich. Initially I thought it is a heavy cream based mango dessert, like a mousse, but mild sourness gave the hint that it is not heavy cream.
Green mango topping might have given that sourness, but hubby said it tasted like our Indian Shrikand. Yogurt based Shrikand tastes delicious, but the traditional preparation stopped me from doing it at home. Since my son likes it I wanted to give it a try😊
Lots of times I have used sour cream and Greek yogurt instead of hung curd and it worked well, so decided to give a attempt with Shrikand as well. This version of instant Aamrakhand become a big hit at home☺️
Mangoes we get here are no way close to the ones we get in India. Few years back I went to India and almost everyday I kept eating mangoes. In terms of sweetness and taste mangoes here totally differ, but after coming to Seattle I somehow got settled with mangoes from two shops which taste far better. Whenever I get fresh mangoes this is one routine dessert we enjoy. 😎
With a chill sour cream this dessert can be made within 5 minutes and enjoyed immediately. It will be in a spoon-eating texture. If you are planning to make ahead and refrigerate I would recommend altering the sour cream quantity. Refer my notes 📝
I want to add more fruit to my son’s snack so made it this way. This might not be authentic shrikand texture. Call it sour cream pudding without gelatin or agar agar😊
I make this for my son’s evening snack, so make it in small portion and he enjoys immediately😊 Weekend I prefer making quantity like this so that we can have it for hot summer evening.
Instant Mango Shrikand | Instant Amrakhand
Ingredients
- Mango - 3/4 cup peeled and roughly chopped
- Sour cream - 1 cup + 1/4 cup
- Cardamom powder - 1/4 tsp
- Sugar - 3 tbsp
- Saffron - 1/8 tsp
- Milk - 1 tbsp
Instructions
- Add saffron to warm milk and set aside, till the milk comes to room temperature
- In a mixie jar add mangoes, cardamom powder, saffron milk and blend till the mango becomes a smooth paste
- Add sour cream to the jar, mix well with a spoon with a spoon and pulse it once. Shrikand is ready

Notes
- If you are planning to make the dessert advance and refrigerate add triple the quality of sour cream compared to mango pulp
- Mango pulp can also be used instead of fresh mangoes
- Adjust sugar according to your desire also depending on the mango sweetness
- Any seasonal fruit can be used for the Shrikand preparation
- After adding sour cream just pulse one or two time to mix well. Avoid over blending
- Use room temperature milk for blending with sour cream to avoid curdling
- Plain shrikand can be made without adding mangoes
- Food color can be added for bright yellow
- If you are using regular curd hung in Muslin cloth for 6 hours and drain
- Use whole fat sour cream. avoid low fat
- Greek yogurt can be used instead of sour cream. Mango flavored whole fat Greek yogurt can be used to enhance the flavour
- We personally prefer white sugar for this sweet. If you prefer use brown sugar or jaggery
