Murungakkai variety
Fresh drumstick gives the best taste, but you can also use frozen drumsticks. Make sure it is not dry and old
Should I roast drumsticks and brinjal in oil?
If you have fresh green drumsticks, you can skip roasting, but for slightly old ones, roasting in oil helps to absorb the flavor. If you want to reduce oil, you can steam cook drumsticks, but the flavor might vary.
Amount of tomatoes?
Depends on the sourness of the tomato. Adjust accordingly.
CAN I add tamarind?
I like the sourness from tomatoes, hence I skipped tamarind. If you are adding tamarin, adjust the tomatoes accordingly
The shelf life of drumstick thokku
It stays good for 2 days in the fridge. For a longer shelf life, skip peanut oil and increase sesame oil.
Spice for brinjal murungakka thokku?
I used sambar powder. If you are using regular chilli powder or Kashmiri chilli powder, reduce the quantity accordingly.

The color of the thokku depends on various factors like the Sambar powder, tomatoes, etc.
CAN I skip the onion and garlic?
Onion and garlic give good flavor, so I would recommend them.

1/2 teaspoon mustard seeds
1 teaspoon urad dal

- First, Heat oil and splutter mustard seeds, fennel seeds, and urad salt
- Add garlic and curry leaves; saute
- Add the onion and give a quick mix
- Furthermore, add turmeric powder and salt; saute well
- Add tomatoes; quick mix
- Furthermore, add drumsticks and brinjal; saute for a minute
- Add sambar powder; mix well
- Furthermore, add water; close and cook till the drumsticks and brinjals cook well
- Open and cook till the thokku comes together
