    Will pavakkai overcook?

    if you cook in a seperator with little tamarind it wont overcook. adding tamarind water helps to reduce the bitterness

    COOKING OIL FOR PORIYAL?

    I would recommend coconut oil for vegan coconut-based Indian poriyal. You can add any oil of your choice.

    FEW VARIATIONS FOR pavakka COCONUT STIR FRY 

    You can use,

    • red chilli instead of green chilli
    • cumin seedsfor tempering
    • Skip onion; prepare poriyal
    •  add ginger powder while adding coconut
    • Almond flour instead of coconut

    ingredients

    pressure cook

    1 pavakkai | bitter gourd

    1/4 teaspoon turmeric powder

    required salt

    1 tamarind water

    to temper

    1 tablespoon coconut oil

    1/4 teaspoon mustard seeds

    1/2 teaspoon urad dal

    1 teaspoon chana dal

    green chilli

    curry leaves

    thoran

    6 small onion

    1/2 teaspoon sambar powderer

    required salt

    sugar/ jaggery

    1/4 teaspoon turmeric powder

    1 tablespoon peanuts

    how to make pavakkai poriyal  with step-by-step pictures

    • first, pressure cook pavakkai, required salt, turmeric powder, and tamarind water in a separator; pressure cook for 5 whistles

    • Transfer to a colander and drain the water; keep aside

    • Add oil and heat

    • Furthermore, add mustard seeds, chana dal and urad Dal; splutter

    • Add green chilli, curry leaves and small onion; mix well and saute till they turn translucent

    • furthermore, add turmeric powder; saute for a minute

    • Add sambar powder, roasted peanuts and coconut; mix well and saute for 2 minutes

    • Add cooked bitter gourd and sugar; mix gently and cook for 6-8 minutes or till you get the desired texture
