WASH AND WIPE THE OKRA

Always wash okra well then wipe it well with a kitchen towel. Chop and spread in the towel and make sure no moisture in vendakkai curry

Always use thick curd

Make sure the curd you use doesn't have whey separated. Always use thick curd

OIL FOR BENDAKAYA FRY

I have used coconut oil. You can use sesame oil/ peanut oil or any oil of your choice.

Can I add besan or rice flour 

Yes, for extra crispness you can add besan or rice flour

MICROWAVE VENDAKKAI FRY

Ingredients 

To marinate

250 grams okra

¼ teaspoon turmeric powder 

1 teaspoon + ½ teaspoon Kashmiri chilli powder

Required salt

2 tablespoon curd

Vendakka roast

1 tablespoon + ½ tablespoon coconut oil 

½ teaspoon mustard seed

Curry leaves few

½ tablespoon urad dal

Asafoetida

How to make vendakkai roast with step-by-step pictures 

  • First, add okra to a wide mixing bowl

  • Furthermore, add turmeric powder, Kashmiri chilli powder, required salt, and curd; mix well

  • Marinate for at least 1 hour

  • Add oil to a wide pan and heat

  • Furthermore add mustard seeds, urad dal, and curry leaves; splutter

  • Add asafoetida; mix well

  • Furthermore, add marinated okra; mix well and cook for 7-8 minutes

  • Based on your desired texture
