    Wonder Wrap - Sweet Corn Capsicum Olive Wrap

    It's been a longtime since we had a guest in TMF, today we have Devi from Kitchen DB. I came to know Devi from FB. She is a good friend of mine, she always encourages me with her lovely comments.  I am very glad to have her recipe in my space 🙂

    Busy mornings call for a quick lunch box recipe. This wrap is perfect To-Go food.  One thing I liked about this wrap is it is a great tasty filling meal by itself, without any side dish. Kids will love this colorful yummy bite. Next to puliyodarai, roti is my preferred travel food. From now on this quick eat wrap will join the club.

     Over to Devi,

    Ingredients:

    Wrap Base
    Whole Wheat Flour - 2 Cups
    Oil - 1 Teaspoon
    Salt – A pinch
    Water – As needed
    Filling
    Sweet Corn Kernels – 1 Cup (Steamed)
    Onions – 1 Chopped
    Yellow Capsicum – Half (Chopped)
    Black Olives – Three Tablespoons (Sliced)
    Olive Oil – 1 Teaspoon
    Salt as needed
    Oregano – A pinch
    Grated Cheese – As needed

    Method:

    • Make Rotis with Whole Wheat Flour, Slat and oil as per the usual method. Keep aside.
    • Heat a teaspoon of olive oil in a pan. Add chopped onions, yellow capsicum and sauté for a minute in low flame. Now add the steamed corn kernels, Sliced olives, Salt and Oregano. Stir it for a minute and switch off stove.

    Wrap It Up

    • Place a Roti on a flat base, Put a Tablespoon of the Filling on one end of the Roti, add a spoon of grated cheese. Roll it tight and cut into two halves. Serve with Ketchup.

      I love the sound of these! Using rotis instead of traditional flatbread or tortillas for this wrap is such a brilliant idea!

      Three kid's palate enhancing ingredients have been used to make this colourful wonder wrap. With such varied colours from the ingredients used for filling, kids will be instantly drawn to this fascinating wrap. A wonderful idea and very nourishing and fulfilling too.
