badam milk is rich, tasty, and healthy, spiced milk is popularly served in many Chennai hotels. Mtr badam milk powder is one of my favorites. Perfect after-school snacks for kids.

freshly roasted Nuts make the golden milk rich and tasty. Saffron and cardamom complement the nut's flavor. Premix powder is sold widely but homemade versions without preservatives and food color make it extra healthy.
Best Indian winter drink
When kids are sick turmeric milk is my frequent go-to choice. It is freezing these days so instead of making plain turmeric milk. I prefer making badam paal. It is filling and comforting for the throat.

You can serve it as an evening drink. If kids/ adults have a sore throat you can serve it before bedtime for a good night's sleep.
Should I cook almonds?
Yes, I recommend this step. If you are grinding with a skip, you can roast and pulse
Can I use almond flour?
Yes, you can use almond flour. In that case, just roast it till it is warm and pulse it once
can I use roasted pistachio?
Yes, in that case, skip, roasting them along with cashews.
Pulse and grind
nuts might ooze out oil if you grind so always pulse and prepare masala paal powder. Pulsing with sugar and milk powder helps with the texture so I would recommend this step
Boiling the badam milk
I prefer boiling the badam milk but instead, you can also microwave.
Should I powder pista and cashews?
It is optional you can pulse them or fine-chop
Variations for badam milk
- Increase sugar if you prefer mtr badam powder
- You can use melon seeds, chironji, or any nuts of your choice
- Full-fat milk is recommended but you use 2 % milk too. Avoid 1 % milk
- You can boil milk for additional time to get malai. When the milk comes to the desired stage add masala doodh powder and mix
- Badam milk is traditionally served chill but you can serve a hot version too. enjoy it according to your preference
Badam doodh for sore throat
- Use panag karkandu instead of white sugar
- add a little pepper
- Consume before bedtime
- Serve warm. Avoid drinking it cold
Shelflife of badam powder
It stays good at room temperature for 1 month. Instead of making big batches always prefer small batch.

Ingredients
Badam milk powder
2 cardamom
6 cashews
1/2 teaspoon turmeric powder
8 pistachio
1/2 cup almonds
saffron
1/2 cup sugar ( use 1 cup for store brought taste)
Masala paal
1+1/2 cup of whole milk
2 tablespoon badam powder
How to make Badam milk powder with step-by-step pictures
Boil badam
- Boil water
- Add badam and cook for 3 minutes
- Turn off the stove and transfer to a colander
- Drain the dripping water
- Furthermore, transfer to a kitchen towel and pat dry the water completely
- Peel the skin

- Dry roast badam for 3 minutes
- Furthermore, add cashews and pista; roast everything well
- Add cardamom pods and cool
- Keep cashews and pistachios aside
- Add sugar and turmeric powder; grind well
- Furthermore add milk powder, almonds, and saffron; mix well and pulse a few times
- Mix again and pulse; avoid grinding
- Finally, add cashews and pistachios; pulse again
- Transfer to a wide plate; cool and store in an airtight container

- Add milk and badam powder; mix well and boil. If required add extra sugar
- Serve hot or cold
