Can I skip tempering?
Yes some people skip tempering and cook spinach, garlic, and onion in little water but in our home, we prefer this version better
Oil for Sri Lankan kadayal
Traditionally coconut oil is used but for variation, you can use the oil of choice
Can I use regular onion
Yes, you can use a regular onion instead of a small onion
Can I cook spinach in water
Since we have added oil and water in the spinach is enough for cooking. If required you can add a little water
Coconut milk?
You can use store-bought or homemade coconut milk. If it is too thick dilute it with water
WILL spinach coconut milk curry taste spicy?
I have used 2 green chilli and red chilli but it was not spicy. If you prefera spicy version adjust chilli accordingly
Can I add Dal for keerai paal curry?
traditionally dal is not added, if you add Dal add extra chili
Can I pulse spinach?
Traditionally spinach is mashed well and prepared. Instead, you can pulse spinach after cooking. Avoid grinding

5 garlic
8 small onions
2 green chilli
1/4 teaspoon turmeric powder
100 grams spinach
1/4 teaspoon heaped salt
1/3 cup coconut milk
1/4 cup water
How to make Sri Lankan spinach curry with step-by-step pictures
- First heat coconut oil
- add mustard seeds, fennel seeds, and red chilli; roast
- Furthermore, add garlic green chilli, and small onions; saute well
- add turmeric powder and spinach; Saute till spinach gets wilted
- Furthermore, add coconut milk, water, and salt; mash and cook till the curry comes together
