Leftover rice
I used fluffy leftover Sona masoori rice. You can use raw rice, brown rice, basmati rice, quinoa, millet, etc. Adjust the water accordingly
Water
The amount of water might be on the rice variety and also the rice texture. I have used slightly less than 1 cup. If the rice is slightly mushy start with 3/4 cup Rice. Keep hot water handy, sprinkle if required.
Rice flour
Though we add leftover rice, I would recommend rice flour for the best pliable dough. The amount of rice flour might vary. Keep extra rice flour handy, add if required
CONSISTENCY OF idiyappam dough?
It should be pliable dough. If it is sticky sprinkle rice flour.
Should I rest the dough
Yes, avoid pressing when it is piping hot.

1 cup fluffy leftover rice, heaped
1/2 teaspoon sesame oil
Less than 1 cup water
1 teaspoon salt
1/4 cup rice flour, heaped

How to make leftover rice idiyappam with step-by-step pictures
- First grind rice flour, water, sesame oil, and salt
- Add sesame oil and cook till porridge consistency
- Furthermore, add rice flour; mix well and cook till it turns into a nonsticky pliable dough
- Grease sesame oil. Cover with a damp cloth
- After it is cool enough to handle pinch a portion
- Grease idiyappam press and plate
- Press idiyappam and steam cook for 3 minutes
- Rest then serve
