    Almond Brownies - Gluten Free

    Gluten-free Almond brownies are tasty brownies prepared with Almond flour. Kids like brownies, try with almond flour to make it bit healthy. Addictive tea time snacks for all chocolate lovers. Almond brownies also make a tasty dessert, with a scoop of ice cream.

    On a side note, TMF is entering into its 4th year today 🙂 I couldn't believe how 3 years passed so fast. Well I stayed in hibernation for one year, but I am so happy to be back. Thank you readers, followers, friends and family for all your support. Without all of your support, this wouldn't have happened.

    Well excitement at one side to be honest, till yesterday evening I didn't remember about my blog anniversary. Yesterday evening Jagadish came from work and asked me what dessert have you made, I was clueless and thinking why he wants a dessert all of the sudden. I asked why, He said tomorrow is your blog-a-versary, I thought you will post some sweet. He was quoting dairy milk ad, "Sweet edu koondadu" (celebrate happy occasion with sweet)".

    I don't know how I forgot it. I started worrying that I didn't cook anything special. He told me you have a day's time and can still manage to prepare something. For my first anniversary I posted Paruppu Payasam.  Second year I was inactive. If I make something in hurry I am not sure how it will turn so I decided to pick something which I prepared recently and have the pictures handy. 

    I browsed and saw thogayal, kootu, rasam, kuzhambu, quinoa dish, brownie, cookie, bread, oh ya stay tune for all these recipes. Whenever I pick Vishvak from school I ask him how was your day, now a days he started asking me the same question.  "Blog work panniya" is one of his default question (Did you do blog activity today). I decided to ask him to pick his favorite item (among the ones I had handy) so that I can post the recipe. Without any delay he shouted brownies. So, here it is.

    Vishvak loves brownies. Chocolate was the last thing I would eat, until he started liking chocolate. Giving healthy snacks for kids is important, at the same time cooking the food they enjoy is also something I have in my mind. Usually I make Brownies with whole wheat flour. My recent addiction for Almond flour made me try it with brownies. As always the recipe in the flour pack was handy. I followed it and brownies came perfect.

    Almond Brownies - Gluten Free

    Gluten - free Almond brownies are tasty brownies prepared with Almond flour. Kids like brownies, try with almond flour to make it bit healthy. Addictive tea time snacks for all chocolate lovers. Almond brownies makes a tasty dessert, with a scoop of ice cream.

    Ingredients

    • Almond flour - 1 cup + 1/2 cup
    • Brown sugar - 1/4 cup tightly packed
    • White sugar - 1/4 cup
    • Vanilla extract - 1 teaspoon + 1/2 tsp
    • Chocolate chips - 2/3 cup
    • Eggs - 2
    • Almonds - 1/2 cup
    • Butter - 1/2 cup
    • Semi- sweet chocolate chips - 4 oz

    Instructions

    • Preheat the oven to 350 degree Fahrenheit and place a parchment paper on baking pan, grease it with butter m/ cooking spray
    • In a heavy bottomed sauce pan add butter and chocolate, melt them on low heat till the chocolate is completely melted
    • Add brown, white sugar and vanilla to the chocolate sauce; let it cool down
    • In a separate wide bowl beat the eggs. Add the chocolate sauce and mix well
    • Stir in Almond flour and mix well
    • Finally add chocolate chips and sliced almonds
    • Transfer the mixture to baking pan. Bake for 30 - 35 (mine got done in 32 mins) minutes or until a toothpick inserted comes out clean. Let it cool down, cut into squares

    Notes

    1. 1/4 cup of applesauce or 1/4 cup of mashed banana or 1/4 of vegetable oil
      can be used to replace eggs
    2.  1 tablespoon of flax seed powder + 3 tablespoon of water can also be used to replace eggs
    3.  1/2 teaspoon of instant coffee powder can be used to enhance the chocolate flavors since I give brownies to my son I skipped it
    4. Almond extract can be added for almond flavor instead of vanilla extract
    5. Baking time may vary from oven to oven. If the oven is on for longtime it might cook faster
    6. Roasted sliced almond can be topped to the brownie batter and baked

      I don't think there's anything better than a freshly baked brownie with ice cream melting on top. I love the idea of an almond flavor in a brownie too and I'm not even gluten-free.

      Although we don't have any dietary restrictions in our house, I do experiment with GF baking. We have a friend and I bake for when she comes over for dinner. GF foods/baking has come such a long way....and I will admit I often cook GF. These brownies look and sound delicious. Chocolate and almonds is a great pairing.

      The almond brownies look so good. The center I can tell is moist and rich. I haven't used almond flour but I'd love to try. This would be a great recipe to start off with. I can't wait to make these brownies for my grandsons.
