    Aloo Gobi is a delicious dry Curry which can be prepared within 10 minutes. Potato cauliflower curry tastes good with rice and roti.

    This is a special guest post😊 Yes, when hubby jumps into the kitchen and makes a delicious curry, it is definitely worth posting.🤣 Actually I have to thank chef Venkatesh Bhat for the recipe.

    I am a big fan of Chef Bhat.  From Kitchen super star to Samayal samayal I have been watching his shows. Udipi Sambar is based on his recipe. Few weeks back I was watching this program from hotstar, and hubby was sitting next to me. Chef prepared Aloo Gobi, and while seeing the recap I called him and told how delicious the Aloo Gobi looks.

    My hubby commented it looks so simple, and even he could do it. I said why not, hubby took the challenge, and next day, we had Aloo Gobi for lunch. Thanks to the Chef😊 May be I should watch his show often with him and take breaks from cooking 🤣

    I like the wedges style potato cutting for this recipe. That helps in faster cooking. Without much masala, this is one simple and delicious curry. Garlic gives nice flavor to the dish.

    Ingredients

    • Potato - 2 big , cut into wedges
    • Cauliflower - 1/2 cut into florets
    • Garlic - 2 tbsp
    • Chilli powder - 3/4 tsp
    • Turmeric powder - 1/4 tsp
    • Salt - as needed
    • Sugar - 1/4 tsp
    • Kasthuri Methi - 1/2 tbsp crushed
    • To temper:
    • Oil - 1 tablespoon + 1 tsp
    • Mustard seeds - 1/4 tsp
    • Cumin seed - 1/2 tsp

    Instructions

    • In a pan add oil and once oil is hot add mustard seeds and cumin seeds; let it splutter
    • Add the chopped garlic and cook till the raw smell goes off
    • Add turmeric powder and chilli powder and cook in low flame for a minute
    • Add the cauliflower and potato; mix well to blend the masala
    • Add a tablespoon of water. Cover the pan with lid and cook for 7-8 minutes. Stir it once in between
    • Add kasthuri Methi and stir once. Switch off

    Notes

    1. Cooking time may vary depending on the size of chopped veggies
    2. If your using the lid without pores for steam the veggies might become watery
    3. The cauliflower we get here in the US needs less water. Add extra water depending on cauliflower cooking time
    4. Adjust spice according to your taste
    5. Add mustard seeds and cumin seeds inky after the oil is hot else cumin seeds might turn dark brown by the time garlic is cooked
