    Aloo Gobi Fry | Potato Cauliflower curry

    Aloo Gobi is a delicious dry Curry that can be prepared within 10 minutes. Potato cauliflower curry tastes good with rice and roti.

    Chopping cauliflower 

    I would recommend chopping them into small florets. Big ones might take longer time to cook. Too small ones might not retain the shape.

    Should I parboil cauliflower? 

    No, don't cook cauliflower in water. The curry turns flavorful only when cauliflower gets cooked in oil.

    Chopping potatoes

    I prefer wedges style cutting as it gets cooked faster.

    Should I drizzle water for cooking cauliflower? 

    I covered and cooked. The steam and moisture in the cauliflower were enough. If required sprinkle water

    Masala for curry

    You can use any masala of your choice. I kept it simple.

     

    Ingredients

    2 Potatoes, wedges

    1 Cauliflower small, cut florets

    1 tablespoon Garlic 

    1/4 teaspoon Turmeric powder 

    1 teaspoon chilli powder

    1/2 teaspoon Salt 

    Pinch of Sugar 

    1/2 tablespoon Kasthuri Methi

    To temper

    2 tablespoon Oil 

    1/2 teaspoon Cumin seed 

    How to make Aloo gobi fry with step-by-step pictures

    • Soak cauliflower in hot water with a pinch of turmeric powder

    • soak potato in cold water

    • Transfer both to a colander and drain the water completely 

    • In a pan add oil and once the oil is hot add cumin seeds; quickly mix 

    • Add the chopped garlic; roast well 

    • Add turmeric powder and chilli powder; quickly mix 

    • Add the cauliflower and potato; mix well to blend the masala

    • Cover and cook for 4 mins; mix well in between

    • add salt; cover and cook for 5-6 minutes or until veggies are well roasted

    • Finally, add sugar and  kasoori methi; mix well and turn off the stove
