Serve it warm or cold, this Badam payasam tastes great. Badam milk is a nice healthy drink for kids and also good for pregnant women. This homemade Badam milk is so addictive.

My Almond flour mania continues😊 Ever since I started “Sweet February”. I have been posting a couple of sweets in Burfi and halwa form. Finally, there is a drink to enjoy😋 This is an Indian version of Almond milk. Almond milk I see here is prepared with almonds, and those are vegan, but this one is prepared with cow’s milk.

When I was a child my favorite summer drinks were mtr and poonam Badam drink. Both differ slightly in taste and also texture. I prefer chopped almonds that I get to bite while drinking the milk, but my sister prefers the other. Chennai’s summer days outing never ended without Badam milk.

Every time I feel like making Badam milk at home somehow the elaborate process stopped me from doing it. A few months back we went to an Indian store for dinner. They served Badam milk as a welcome drink. I just finished it in no time. My son asked what is it and told me he liked it.

I have tried some Kesar Badam health drink for him, before but it was not a big hit. The moment he said he likes it I thought homemade health drink is much better than store-bought ones, and of course without any preservatives. Also, this is one great drink to consider for pregnant women. With almonds, this is super healthy✋🏻With cardamom and saffron, this is one flavorful milk.

When we can make all the traditional Indian sweets with Almond flour instead of Almonds why not Badam milk. Believe this is one the easiest Kheer I ever made. For me drink with milk and sugar is payasam/Kheer. Call it however you want but this is one instant drink that can be prepared within 5 minutes.

Whether you do it for your guest well in advance or after unexpected guests arrive, this is one of the easiest drinks to consider. Be it a welcome drink or a dessert after meal it always wins☺️

If we are having it as an evening drink I add less sugar and for the payasam kind, I just increase the sugar. It is snowing here and time for some hot Badam milk😎 how do you prefer hot or cold😊

Ingredients

  • Whole Milk - 1 cup + 1/4 cup
  • Almond flour - 3 tbsp + 1 tsp
  • Sugar - 2 tbsp
  • Cardamom powder - 1/8 tsp
  • Saffron - 1/8 tsp

Instructions

  • In a mixie jar add 1 cup of milk, almond flour, sugar and cardamom powder and grind into a fine mixture
  • Add saffron and transfer into a pan. Add remaining milk to the mixie jar and shake the jar well and transfer into the pan
  • On medium flame boil the milk. Once it starts boiling switch off. Badam paal is ready

Notes

  1. Saffron can also be ground with other ingredients
  2. Food color can be added for extra color
  3. Serve the almond milk with chopped nuts
  4. Regular almonds can be used instead of almond flour. Soak almond in hot water. Peel the skin and grind with milk and sugar
  5. Cardamom pods can be added while grinding
  6. Some almond flour might be slightly grainy, in that case some flour may settle down at the bottom of the payasam. Payasam can be strained once in that case
  7.  1/4 cup of Evaporated milk or 1 tbsp of condensed milk can be added for extra flavour
