    Mezhukkupuratti | beans curry is a tasty South Indian style poriyal variety. it takes around 10 minutes to prepare this poriyal-style curry. Tips & tricks to make Indian vegan style.

    What is Mezhukkupuratti

    Mezhukkupuratti is a traditional Kerala dish from South India. It's a dry stir-fry preparation, often made with vegetables like beans, raw banana, or yam. The vegetables are usually thinly sliced and cooked until they are tender.

    Mezhukkupuratti Vs thoran

    Mezhukkupuratti and Thoran are both South Indian dishes, but there are subtle differences between them. Mezhukkupuratti is a dry stir-fry where the vegetables are typically sliced or chopped and sautéed with spices until tender. On the other hand, Thoran is a dish where the vegetables are finely chopped, mixed with grated coconut and other seasonings, and then stir-fried.

    Can I fine-chop beans?

    Traditionally beans are chopped in this way. You can fine chop for variation

    Can I steam-cook veggies

    Yes, but the flavor might vary. Beans cooked this way give the best flavor

    Can I skip garlic

    Garlic gives amazing flavor to the Kerala style but you can skip it according to your taste.

    Can I use regular onion?

    Yes, you can use regular onion but small onion gives the best flavor.

    It goes well as a side for kuzhambu, rasam, kootu and variety rice

    Shelf Life of beans stir fry 

    Stays good for 2 days

    Is it spicy curry

    We use green chilli, chilli flakes, and chilli powder so adjust according to your source level.

    Ingredients

    200 grams of green beans

    1 tablespoon coconut oil

    Required salt

    1/2 teaspoon mustard seeds

    Curry leaves few

    4 garlic

    1 green chili 

    1/2 teaspoon chilli flakes

    3/4 cup small onion

    1/2 teaspoon chilli powder

    How to make Kerala-style beans Mezhukkupuratti with step-by-step pictures 

    • Add oil and heat

    • When the oil turns hot add mustard seeds and splutter

    • Add curry leaves, green chilli, and chilli flakes; mix well

    • Furthermore, add garlic and saute till they change color

    • Add onion and saute till onion turns translucent

    • Furthermore, add chilli powder; mix well and cook for a minute

    • Add beans; mix well

    • Furthermore, add the required salt and water; mix well

    • Cover and cook for 7-9 minutes; until beans are cooked

    • Check  salt and add if required 
    • Open cook for 2 minutes
