    WHY Broccoli curry?

    For a healthy and tasty  lunch/dinner- Broccoli stir fry with besan is perfect. It tastes good as a side dish with variety rice or with rice accompaniment 

    CAN I ADD Broccoli THICK STEM?

    No, for faster cooking I would recommend skipping the thick stem. 

    CAN I CUT Broccoli INTO BIG FLORETS?

    yes in that case sprinkle water and cook for longer time.

    SHOULD I WASH Broccoli  IN HOT WATER?

    I have never noticed worms in Broccoli  I get here in the US so I have washed it in cold water. If you are doubtful then wash in hot water.

    CAN i steam cook broccoli?

    If you are using big florests Steam-cooking broccoli helps to retain its green color and cooks just right. Alternatively, you can microwave broccoli or soak it in hot water and then saute it with extra oil.

    COOKING OIL FOR PORIYAL?

    I have used coconut oil. You can add any oil of your choice.

    can i add besan immediately?

    if you add besan aftr the broccoli turn cool, curry turns crispy. Adding besan while briccoli is hot might turn soggy.

    Broccoli curry VARIATIONS

    You can use,

    •  onion and garlic; prepare poriyal
    • Use ginger powder  ot  ginger 
    • Almond flour or coconut
    • spice powder of your choice
    • lemon juice after turning off the stove

    Broccoli based recipes

    ingredients

    1 broccoli

    temper

    1 teaspoon coconut oil

    1/2 teaspoon mustard seeds

    1/2 tablespoon urad dal

    1 teaspoon chana dal 

    curry leaves few

    asafeotida

    broccoli besan curry

    1/4 teaspoon turmeric powder

    1/2 teaspoon garam masala

    2 tablespoon besan flour 

    1/2 teaspoon chilli powder

    required salt

    how to make broccoli besan fry with step-by-step pictures

    • add oil to a wide heavy bottomed pan and heat on medium flame

    • furthermore, add mustard seeds, urad dal and chana dal; let them splutter

    • Add curry leaves and asafoetida; mix well

    • furthermore add broccoli, turmeric powder and salt; cover and cook for 3 minutes

    • open cook till moisture evaporates 

    • turn off the stove

    • add besan flour, chilli powder and garam masala; mix well

    • turn down to the lowest flame

    • cook for around 12 minutes till raw smell completely goes off and gets well roasted
