    Cauliflower poriyal recipe | Cauliflower curry is an easy tasty 10 minute poriyal

    Why cauliflower poriyal?

    For a quick weekday lunch/dinner- this cauliflower podimas | cauliflower curry is perfect. With little preparation, It takes less than 10 minutes to prepare this flavorful cauliflower poriyal. Since I used a chopper I didn't spend much time even chopping.

    Can I add a cauliflower thick stem?

    No, for faster cooking I would recommend skipping the thick stem. 

    Can I cut cauliflower into big florets?

    If you are looking for a quick Tamilnadu-style cauliflower roast, chop them into smaller pieces. Big florets take a longer time to cook.

    Can I skip soaking?

    I have never noticed worms in cauliflower I get here in the US but for faster cooking and to retain the cauliflower crunchy texture I would recommend soaking in hot water.

    yes, cauliflower shouldn't drip water, that might make cauliflower curry mushy and soggy. It should just have moisture for faster cooking.

    • Skip onion and garlic; prepare poriyal
    • Temper ginger
    • Use Almond flour or coconut for garnish
    • spice powder of your choice
    • lemon juice after turning off the stove

    what tastes best with roast?

    It goes well with a variety rice. Also tastes good as a side for Sambar, rasam, kootu, and kuzhambu varieties.

    Cauliflower recipes

    Ingredients 

    To soak

    275 grams cauliflower 

    1/2 teaspoon turmeric powder

    Hot water 

    To temper

    1 tablespoon peanut oil

    1/2 teaspoon mustard seeds

    Curry leaves few

    roast

    1/2 cup onion

    1 teaspoon ginger garlic paste

    1 teaspoon Kashmiri chilli powder

    Required salt

    How to make cauliflower roast with step-by-step pictures 

    Fine chop cauliflower

    • First, chop cauliflower into small-medium florets 

    • Transfer to a colander and wash well 

    • Add cauliflower, hot water, and turmeric powder and soak for 20 minutes

    • Transfer to the colander and drain the water

    Cook roast

    • Add oil to a pan and turn on the stove on medium flame

    • When the oil turns hot add mustard seeds and curry leaves; let them splutter

    • Furthermore, add onion and ginger-garlic paste; mix well and cook till they turn translucent

    • Add chilli powder and salt; mix well and saute for 2 minutes

    • Furthermore, add cauliflower and mix well

    • Cover and cook 1+1/2 minutes; mix well 

    • repeat the process and cook covered till cauliflower turns soft

    • Open and cook till water evaporates

    • Finally, add besan and rice flour; mix well and cook for 3 minutes; turn off the stove and serve hot
