Can I add onion and garlic?

Yes, you can add but traditionally dahi wali paneer is prepared without onion and garlic so made this way.

    Can I skip melon seeds?

In that case use extra cashew. You can also grind with besan flour.

Yes, traditionally it is not added for dahi wali paneer but for the homestyle version I use it as it helps for paneer to retain the softness.
