    Hotel style Vendakkai poriyal | masala vendakka curry

    Saravana bhavan style vendakka curry

    Tasty hotel-style curry with lady's finger, coconut and peanuts.  It goes well with a variety rice. Also tastes good as a side for Sambar, rasam, kootu, and kuzhambu varieties.

    Wash and wipe the okra

    Always wash okra well then wipe it well with a kitchen towel. Chop and spread in the towel and make sure no moisture in vendakkai thengai curry

    Should I deep fry okra?

    no deep frying is optional. You can saute with a given amount of oil for the best restaurant-style taste.

    Can I skip peanuts?

    Peanuts add amazing flavor to the vendakkai curry, I would highly recommend that. I have pulsed roasted unsalted peanuts. If you are using raw peanuts, roast well then prepare vendakkai poriyal.

    Oil for Bendakaya fry

    I have used coconut oil. You can use sesame oil/peanut oil or any oil of your choice.

    Can I skip onion and garlic?

    Onion and garlic give amazing flavor to the saravana bhavan Vendakkai poriyal. I have used regular onion but you can also use small onion. Also, I fine chopped garlic. Instead, you can also crush garlic.

    Can I skip curry powder

    it gives an amazing hotel taste i would highly recommend it. Instead, you can also use chilli powder, coriander powder

    COCONUT-BASED RECIPES

    Ingredients

    To temper

    2 tablespoon coconut oil

    1/2 teaspoon mustard seeds

    1 teaspoon fennel seeds

    1/2 tablespoon chana dal

    1 teaspoon cumin seeds

    curry leaves

    1 red chilli

    Okra curry

    1 green chilli

    275 grams okra

    3 garlic

    1 cup small onion

    1/2 tablespoon curry powder

    1 tap salt

    Pinch turmeric powder 

     2 tablespoon coconut 

    1 tablespoon crushed roasted peanuts 

    How to make Hotel style Vendakkai poriyal with step-by-step pictures 

    preparation

    • First, wash the okra and dry it completely before

    • thaw coconut
    • pulse roasted peanuts 

    temper

    • Add oil to the pan and oil turns hot 

    • Furthermore add mustard seeds, chana dal, cumin seeds, curry leaves; fennel seeds, and red chilli; let them splutter


    • Furthermore, add green chilli, crushed garlic and onion ; sauté for a minute

    • Furthermore, add turmeric powder; quick well 

    • add okra; mix well

    • Sauté till slimy texture goes

    • add salt and curry powder; mix well and sauté for 3 minutes

    • Furthermore, add coconut; mix well

    • finally, add peanuts; sauté for 2 minutes
