    Green chilli

    Green Chili, is one ingredient I use almost every day in my kitchen.  it plays a key role in South Indian cooking and north Indian cooking. We buy Indian groceries once a week and I always buy a handful of green chilli. If green chillies are not stored properly they turned to get spoiled soon.

    Freezing green chilli during winter

    During snow time I prepare to buy a big batch of green chilli and store it in the freezer. It is super easy to thaw and use frozen green chilli. The best part of homemade frozen green chilli it is preservative-free and done after proper cleaning

    can I do this for all varieties of green chilli?

    You can store any kind of fresh chili peppers using this method of storing. I have shared the method with the Indian variety of Green Chilies but you can follow the same for Anaheim, Ghost Chili , Jalapeno, Serrano, Thai Red Chili Peppers, etc. 

    Should I wash the green chilli in hot water?

    I generally wash chillies in cold running tap water. If you are concerned about the quality you can wash with warm water. Avoid washing with hot water.

    can I skip drying the green chilli?

    No always make sure green chilli is completely dry before storing them

    Do I need to use stainless steel container?

    I prefer using stainless containers but you can use plastic or glass containers too

    Can I skip using a kitchen towel?

    No, I would recommend a kitchen towel | paper napkin as it absorbs the moisture and helps green chilli to say fresh for a longer time

    How Long green chilli stays good in the fridge?

    If maintained well green chilli can stay fresh for up to one month in the fridge. For longer shelf life I would recommend freezing

    Can I store green chilli with the stalk?

    I have tried storing green chilli with and without the stem. I felt green chilli without stalk staying for a longer time.

    Should I discard green chilli turned yellow?

    Store green chilli turned yellow separately and use it soon. Avoid storing it with the fresh green chill. Discard the rotten, mushy chilies insect bit chilli.

    Can I store mild damaged green chilli?

    Chop off the damaged area and discard. Store the good portion separately and use it within 2 days.

    Ingredients

    • Green chillies

    Instructions

    • Place green chillies in a colander and wash well
    • Slightly tilt the colander and drain all the liquid
    • Remove the stalk and keep the good green chilli separately
    • Store the yellow ones separately and use them within 2-3 days. avoid Placing them with green chilli
    • Discard the spoiled one. If you see some mild damaged green chilli, trim them and store them separately. Use them within 2 days
    • Separate the good fresh ones and spread them
    • Dry them till moisture evaporates. No need to sundry
    • Press them with a paper towel to make sure they are completely dry

    For weekly green chilli storage - small batch

    • Place kitchen towel on the storage container
    • Add a good batch of fresh green chillies and wrap the paper towel well to prevent moisture

    For Monthly green chilli storage - medium batch

    • Always use a wide container for large batch
    • Add a batch of green chilli and spread them
    • Place paper towel top and make sure green chillies are not exposed
    • Add another batch of green chilli and spread them

    Freeze for large batch

    • Use freezer-safe container/ziplock cover
    • Add green chilli and fold the ziplock bag to remove the air out of the bags
    • Tightly seal and freeze
    • To thaw take out the required chilli and keep at room temperature for a few minutes and wash in water
    • Fold and tightly seal the ziplock bag. Freeze for later use
