Leftover Rice Idiyappam | Idiyappam with cooked rice is a soft and filling tiffin recipe. It turns extra soft so perfect for a lunchbox.

Leftover rice

I used fluffy leftover Sona masoori rice. You can use raw rice, brown rice, basmati rice, quinoa, millet, etc. Adjust the water accordingly

Water

The amount of water might be on the rice variety and also the rice texture. I have used slightly less than 1 cup. If the rice is slightly mushy start with ¾ cup Rice. Keep hot water handy, sprinkle if required.

Rice flour

Though we add leftover rice, I would recommend rice flour for the best pliable dough. The amount of rice flour might vary. Keep extra rice flour handy, add if required
