    Mac and Cheese

    Mac & Cheese is a creamy macaroni with lotsss of cheese. This white sauce pasta with subtle flavours are perfect for kids. It can be prepared within 15 minutes. Perfect for kids party.

    For many years whenever I think cuisine other than Indian, Italian is the first thing it comes to my mind. Both hubby and me are big fans for pasta.

    Whenever we visit Italian restaurant,  We always order White Sauce Pasta and that is the first pasta I ever tried preparing at home. My hubby then introduced me to Red sauce and Pesto Pasta.  After moving to US I hear a lot about Mac and Cheese.

    Being a big fan of white sauce, I usually prepare Macaroni with it and add cheese towards the end; call it "Mac and Cheese". It tastes great but I recently came across Ree Drummond's (Pioneer women) version of Mac and cheese. My son is a fussy eater, making him eat food is my life's biggest challenge, so I always looks for filling meal (stomach and taste buds). This Version with heavy cream pulled my attention.

    It's extra rich version for kids without maida/all-purpose-flour.  Kids can't say no for this creamy and yummy treat.  Dish can be prepared within 15 minutes.

    Certain dishes steal the show while preparing and this is one such food. I prepared the sauce and gave him for tasting, he tasted and opened this mouth for second serve, happy mom 🙂 Now I know why all kids go crazy for Mac and Cheese, well the truth is even we can't stop eating it. Once in a while it's ok to have such Guilty pleasures.

    If you have few uncooked /cooked macroni and thinking to cook something other than pasta try Macroni Payasam

    Ingredients:

    Mac - 1/3 cup
    Heavy cream - 1 cup + 1/2 cup
    Cream cheese - 1 tablespoon + 1/2 tablespoon (I used philphedia onion and chives)
    Cheese - 1/4 cup
    Garlic - 1, peeled and finely chopped
    Italian seasoning - as needed
    Salt - as needed
    butter - 1 tsp
    Crushed Pepper - as needed

    Method:

    • In a Saucepan, on medium heat add water and salt, and let the water come to a boil; add the macroni stir and close the lid. Cook macroni as per the instruction given on the package and drain the water. Add little oil/butter and mix well

    • In a pan on medium heat add butter and when  it is hot, add the minced garlic, and saute for a minute.  Add heavy cream, cream cheese, salt; mix well

    • Cook till sauce starts boiling. Add Italian seasoning, crushed peppers and mix well. Add cheese and cook till the cheese melts

    • In a bowl add cooked pasta and sauce; mix well. Rich and Creamy Mac and cheese is ready

    Notes

    1. Evaporated milk can be used instead of heavy cream
    2. Veggies like peas, carrots, zucchini etc. can be added
    3. Basil (fresh/dried), pepper powder, crushed red pepper can used instead of Italian seasoning mix
    4. Mac and Cheese thickens over time. Little milk/heavy cream can be added if eaten over certain time
    5. Adjust the sauce according the consistency you prefer
    6. Pepper powder can be used instead of crushed pepper

      This looks yummyyy. ..I love trying out varieties of pasta at home... ☺ Last week I had tried a mac and cheese pasta without using cheese..from a video I found on buzz feed. .

      I use fresh milk to make white sauce, but I hope heavy cream will taste even better coz of its butter fat content. Awesome recipe Vidya!
