    Can I cook potatoes in the microwave?

    Yes, you can microwave the potatoes. The timing may vary depending on the microwave setting. Use a microwave-safe bowl and place roughly cut potatoes, turmeric powder, water, and microwave till potatoes turn soft but not mushy.

    Will potatoes turn mushy if I cook for two whistles?

    I usually buy gold potatoes, and they cook perfectly if I cook for one whistle and natural pressure release. A certain variety of potatoes cooks perfectly in 2 whistles, some might turn mushy with 2 whistles, so the number of whistles differs depending on the variety of potatoes used. Cook it accordingly.

    Why should I run a potato in cold water?

    After potatoes are cooked, I usually prefer keeping them in a colander and running tap water, as it stops further cooking.

    Can I use Chilli powder for urulai kizhangu roast?

    Yes, you can use Chilli powder instead of Sambar powder. Adjust the quantity according to your preference.

    Can I cook the urulai roast in a high flame?

    No slow roasting is the key to perfect, crispy golden potatoes.

    Can I cook a potato in a non-stick pan?

    Yes, you can cook potato roast in any pan of your choice, but I love the texture of cast iron urulaikizhangu roast, which turns out best.

    Should I make a vegan potato roast?

    No, I prefer coconut oil flavor, so I like using it for my urulaikizhangu roast. You can use any oil of your choice or add ghee for richness.

    Can I add other masalas/ spice powders to the potato roast?

    You can play with your favorite flavors and make a potato roast. I prefer to keep it simple, so I generally add Sambar powder alone.

    pressure cook

    3 medium gold potatoes

    Water

    Turmeric powder

    Salt

    Temper

    1 tablespoon coconut oil

    1/2 teaspoon mustard seeds

    1 tablespoon Chana dal

    Curry leaves

    Potato fry

    1 tablespoon besan flour

    Salt

    1+1/2 teaspoon Sambar powder

    1/2 cup onion

    How to make uralaikizhangu poriyal with step-by-step pictures

    • Pressure cook the potato with water, turmeric powder, and salt for 1 whistle

    • Drain the water and cool
    •  peel the skin and roughly smash

    • Add besan flour, sambar powder, and salt; mix and rest

    • Heat coconut oil and temper mustard seeds, Chana dal, and curry leaves

    • Add onion and saute till onion turns translucent

    • Add marinated potatoes; cook in low-medium flame for 8-10 minutes
