If you have a kid who is picky about vegetables, this pasta is perfect.

Lunch box recipe – pumpkin  pasta

Easy and tasty pumpkin pasta is perfect for a packed lunch. My kids hardly eat pumpkin, but this pasta is always a big yes for them

Pasta for pumpkin sauce pasta

You can use any variety of pasta. Elbow,  shell, Rigatoni, Penne, etc.

Will it taste good without cream/butter

Yes, almonds, pumpkin, along with parangikai turn creamy

Cheese for vegetable pasta

Based on my kid’s taste I have used mozzarella. You can also use cheddar, Gouda, Gruyère, Fontina and Parmesan, etc.

Milk for yellow pumpkin pasta

Milk gives richness and the perfect flavor to the pasta. I would highly recommend it. If you are skipping milk, add paneer or tofu

How long should I cook pasta in the sauce 

Almonds and pumpkin help pasta thicken over time. Avoid overcooking.

Can I use butter instead of oil

Yes, you can use butter

Ingredients 

Pressure cook pasta

50 g pasta

100 ml water 

Italian seasoning

1/2 tsp olive oil

Salt

Pressure cook pumpkin

50 g pumpkin

1/2 tbsp Onion

2 Garlic

Italian seasoning 

Chilli flakes 

Salt

Water

Pasta

1/4 cup milk

1 tbsp cheese, heaped

1/4 cup water

How to make pumpkin sauce pasta with step-by-step pictures

  • First, add pasta, water, Italian seasoning, salt, olive oil in a separator

  • Add pumpkin, onion, garlic, Italian seasoning, chilli flakes, salt, almonds, and water

  • Pressure cook for 2 whistles

  • Mix pasta well and keep covered

  • Cool the pumpkin and grind with milk and cheese

  • Cover and cook pasta for 2 minutes

  • Add pasta sauce and 1/4 cup of water; cook for 3 minutes

  • Add seasoning and serve

  • 1/4 cup water

Instructions

  • Add pumpkin, onion, garlic, Italian seasoning, chilli flakes, salt, almonds, and water
  • Pressure cook for 2 whistles
  • Mix pasta well and keep covered
