    Instant ragi dosai - South Indian tiffin

    If you are looking for an instant healthy south indian breakfast recipe, this finger millet dosai is perfect. No Maida, no rava, no Rice flour dosai is not only healthy but tasty and quick

    What tastes best with Ragi dosai?

    You can serve it with idli podi, chutney recipe, sambhar varieties, kadayal, thokku, etc.

    Can I use store-bought ragi flour?

    I have used store-bought finger millet flour. No need to roast them. You can use it as is

    Do I need rice flour?

    Even without rice flour dosai turns crispy and tasty. I generally don't add rice flour

    Can I skip carrot?

    Yes but it is a healthy addition. Instead, you can also add murungai keerai, cabbage, etc.

    Should I discard chilli seeds

    It is optional to make it kids -spice you can

    Should I rest the dosai batter

    Fermentation is not required for instant dosai, but always rest the batter at least for 10 minutes. 

    Can I skip the onion?

    Yes,  onion is optional. Sauteing is not required as it gets cooked

    Tips for perfect instant finger millet dosai

    • Never skip ghee and coconut 
    • Always use three times the amount of water to Ragi flour
    • Rest the instant dosa batter for 10 minutes
    • Make sure the pan is hot enough
    • Avoid flipping the dosai immediately 
    • Drizzle sesame oil on the top

    Ingredients 

    Ragi Dosa batter

    1/2 cup ragi flour

    1+1/2 cup water

    1/2 teaspoon salt

    Carrot

    Onion

    Cashews

    1/2 tablespoon coconut 

    1 teaspoon ghee

    Green chilli

    Curry leaves

    Coriander leaves

    1/2 teaspoon cumin seeds

    Dosai

    Sesame oil

    How to make instant Ragi dosai is a step-by-step guide with pictures

    • First add all the ingredients under “Ragi dosai batter”; mix well

    • Rest for at least 10 minutes

    • Heat the oil in a greased pan on medium flame

    • Sprinkle a little water and check if the water droplets sizzle

    • Mix the batter well

    • Spread and add the batter

    • Drizzle oil on top

    • Dip the dosai ladle in water; make sure water is not dripping 
    • Gently flip 
    • Cook the dosai both sides well

    • Serve hot
