    Lunch box recipe - spinach  pasta

    Easy and tasty spinach corn pasta is perfect for a packed lunch. Perfect for school lunchbox.

    Pasta for creamy spinach pasta

    You can use any variety of pasta. Elbow,  shell, Rigatoni, Penne, etc.

    Can i boil in pan

    Yes pressure cooking is optional . You can cook in pot like regular pasta.

    Cheese for vegetable pasta

    Based on my kid's taste I have used beecher's cheese. You can also use Mozeralla , cheddar, Gouda, Gruyère, Fontina and Parmesan, etc.

    Milk for corn pasta

    Milk gives richness and the perfect flavor to the resturant style pasta. I would highly recommend it. If you are skipping milk, add little cream

    How long should I cook pasta in the sauce 

    Almonds, beets and paneer help pasta thicken over time. Avoid overcooking.

    Can I use oil instead of butter

    Yes, you can use just oil

    Ingredients

    300 grams pasta

    600 ml water

    Salt, to taste

    Italian seasoning, to taste

    1 teaspoon olive oil

    Red chilli flakes, to taste

    For the Sauce

    1 tablespoon butter

    2 tablespoon chopped garlic

    1/3 cup frozen corn

    1¾ cups spinach

    15 g paneer

    ¾ cup milk

    ¼ cup heavy cream

    ¾ cup cheese (your choice: mozzarella, cheddar, etc.)

    Salt, to taste

    Italian seasoning, to taste

    How to make spinach corn pasta with step by step pictures 

    • In a separator, add pasta, water, salt, Italian seasoning, olive oil, and red chilli flakes.

    • Pressure cook for 2 whistles.

    • Mix well and keep covered.
    • Blend paneer and milk until smooth.
    • In a pan, melt butter and roast garlic until golden brown.

    • Add corn and sauté for 1 minute.

    • Add spinach and sauté for another minute.

    • Add cooked pasta along with its water, Italian seasoning, salt, and the paneer-milk mixture. Cook for 1 minute.

    • Add cheese and cook for another minute.

    • Turn off the heat and stir in the cream.
