    Thai Pineapple Fried rice

    Flavorful restaurant-style Thai fried rice with pineapple is easy to make, perfect for get together dinner party.

    Why jasmine rice

    It gives aromatic flavor to the fried rice. You can use regular Sona masoori rice or basmati rice but the taste might differ

    Can I pressure cook the rice 

    Cooking the rice this way helps for a perfect fluffy texture. For restaurant-style pineapple rice, I would recommend this way.

    Tips to note - vegetables 

    Moisture in the washed vegetables might make rice mushy so always dry the washed vegetables make sure carrots are chopped thick else it might not cook soon

    Why vegetarian oyster sauce?

    We don't eat meat so I got this vegetable oyster sauce with mushroom from Amazon. You can use regular sauce according to your preference.

    Best restaurant-style vegan fried rice

    The key to tasty restaurant-style fried rice is fluffy rice. Crunchy vegetables, sweet pineapple, and roasted cashews. The amount of oil gives the restaurant a taste. For the home style version adjust accordingly.

    Can I mix and prepare in advance?

    The rice tastes best when consumed immediately. If you are preparing for a get-together. Prepare rice, saute pineapple, and veggies. Roast tofu and nuts a minute before serving. Mix everything and serve hot. Else cashews might not be crunchy

    Can I use butter instead of oil?

    If you like butter flavor you can use butter instead of oil. Sesame oil gives amazing flavor to the rice so I would recommend that.

    Anything for the spice?

    I prepared kids-friendly version without any spice. You can add chilli flakes and make it the way you like.

    FRIED RICE RECIPES

    VARIETY RICE WITH GARLIC/ ONION

     

    Ingredients

    cook rice

    1 cup jasmine rice

    1/2 cup + 1 cup water

    Required salt

    1/2 teaspoon Sesame oil

    Spring onion

    Marinate and Fry tofu

    1 teaspoon corn flour

    1+1/2 cup firm tofu 

    1 teaspoon soya sauce

    1/2 teaspoon garlic powder

    1 teaspoon all-purpose flour

    Sesame oil 1 tbsp

    Pineapple Fried rice

    1 tablespoon sesame oil

    6 garlic, finely chopped

    1+1/2  cup mixed vegetables (I used carrot, broccoli and peas)

    1/2 tablespoon soya sauce

    1 +1/2 teaspoon Brown sugar

    Required salt

    2 tablespoon vegetarian oyster sauce

    Spring onion

    How to make Thai pineapple Fried rice with step-by-step pictures

    Marinate tofu

    • First, drain the water completely and cut the firm tofu
    • Add soya sauce, corn flour, all-purpose flour, garlic powder; mix well and keep aside

    Cook rice

    • Boil water with required salt and sesame oil

    • Wash jasmine rice and add; when it boils well

    • Cover and cook for 7 minutes; till rice turns fluffy

    • Turn off the stove; rest for 5 minutes

    • add spring onions; mix well and transfer to a plate

    • drizzle oil and and keep it aside

    fry tofu

    • Add oil and heat in medium-high flame

    • Fry tofu golden brown and keep aside

    Pineapple fried rice 

    • Add oil and roast cashews and raisins golden brown; keep aside

    • Furthermore, add garlic and roast golden brown

    • Add mixed vegetables and cook for 2 minutes

    • Furthermore, add salt and turmeric powder; saute for 2 minutes

    • Add pineapple and brown sugar; saute for 1 minute

    • Furthermore, add soya sauce and oyster sauce; mix well

     

    • Add rice; saute for 2 minutes

    • furthermore  add roasted cashews, raisins, and tofu; mix well

    • Finally, sprinkle spring onion; mix well
