    Can I use thin Aval

    I would recommend using thick poha as it gives a good texture to the jaggery-based Indian sweet recipe.

    Should Vella Aval texture be slightly mushy?

    Traditionally many people make inipu aval fluffy but to make it toddler-friendly I prefer this texture. Adjust the water according to your preferred texture.

    Jaggery quantity

    Adjust according to your sweetness and also jaggery variety

    Can I add jaggery directly? 

    Jaggery might have impurities so I would recommend preparing jaggery water. Strain then add to the sweet. If you use big chunks of jaggery, melt in a microwave or stovetop

    Should I saute coconut?

    It is optional but gives good flavorful to the sweet aval.

    variation - you can use

    • thin poha, sprinkle water to turn them soft
    • Add Edible camphor, nutmeg, etc.
    • Roasted almonds, raisins, or nuts of your choice
    • Sprinkle coconut before turning off instead of sautéing
    • You can cardamom pods instead of cardamom powder

    Ingredients

    Soak Aval

    1/2 cup thick Aval | Flattened rice

    1 cup hot water

    Soak jaggery

    1/3 cup powdered jaggery tightly pressed

    1/3 cup hot water

    Vella aval

    1 tablespoon ghee

    2 tablespoon coconut

    5 cashews

    1/8 teaspoon cardamom powder

    Pinch of salt

    How to make Sweet Poha with step-by-step pictures

    Soak Aval

    • Firstly wash Aval and soak in hot water for 3 minutes or till they turn soft press

    • Transfer to the colander and save the water

    • Add powdered jaggery and hot water; let the jaggery melt

    Vella Aval

    • Add ghee to a pan and heat

    • Furthermore, add  cashews and coconut; roast till cashew starts to change color

    • Filter and add jaggery water and bring to boil

    • When jaggery water boils well, add soaked aval, extra water we saved (adjust according to your preferred texture), salt, and cardamom powder

    • Boil for  3-4 minutes or till it comes together; turn off the stove and serve hot

    If the jaggery you are using is without any impurities can skip Filtering the jaggery syrup
    Adjust jaggery according to your sweetness
