    THOGAYAL | THUVAIVAL VARIETY

    When it comes to Thogayal varieties most of the Thuvaiyal varieties we do in our homes will have a blend of vegetable, lentil, coconut, and spice. Compared to the chutney variety Thogayal are thick. Tempering is optional for thogayal varieties.  Many Thuviyal varieties are prepared in  Tamil Brahmin cooking. Thogayal rice with a side of tamarind-based kuzhambu tastes best.

    Watermelon rind THOGAYAL

    Watermelon is the best summer special fruit. Instead of throwing watermelon rind thogayal is a tasty way to utilize the rind. The tanginess from tomato and tamarind, spice from red Chilli, the flavor from coconut, and taste from asafoetida make this watermelon thuvaiyal flavorful. 10 minutes of quick tarbooz thogayal is the best

    How to cut watermelon rind?

    Always peel the green skin and remove the watermelon red flesh completely. use only the rind without fruit for thogayal.

    Is it spicy rind thogayal?

    I have used Karnataka red chilli, they are not spicy hence used 3 . Adjust the red chilli according to your taste.

    Can I pressure cook the rind?

    Rind cooks fast so I didn’t pressure cook but you can pressure cook rind with a little salt in a cooker separator.

    Should I add water while grinding?

    If you prefer thick thogayal consistency skip water. to make watermelon chutney you can add water and tempering

    Ingredients

    Saute dal

    • 1/2 teaspoon coconut oil
    • 2 tablespoon urad dal
    • Mustard seeds few
    • Fenugreek seeds few
    • Red chilli 2-3 adjust according to your spice

    Saute rind

    • 1/2 teaspoon coconut oil
    • 1 + 1/2 cup watermelon rind
    • 1/2 cup tomatoes
    • 4 grams tamarind
    • required salt
    • water as required
    • 1/2 teaspoon asafoetida
    • 3 tablespoon coconut

    Instructions

    • Saute urad dal, red chilli, fenugreek seeds, and mustard seeds in coconut oil till dal turns golden brown
    • Add coconut oil to a wide heavy-bottomed pan
    • Furthermore add tomatoes, and watermelon rind and saute till they slightly change color; transfer and cool
    • Add tamarind, required salt and water; cover and cook till rind turns soft
    • Transfer and cool
    • Furthermore, add asafoetida and coconut and wait till roasted ingredients come to room temrpetaure
    • Grind dal and red chilli first
    • add other ingredients and grind well

    Notes

    1. Coconut is optional, you can make Thogayal without that
    2. Channa dal can be used instead of urad dal
    3. You can also pressure cook rind
    4. Adding water while grinding will make Thogayal to chutney consistency 
    5. Garlic and onion can be added for extra flavor

    How to make Watermelon rind thuvaiyal with step-by-step pictures

    • Firstly Saute urad dal, red chilli, fenugreek seeds, and mustard seeds in coconut oil till dal turns golden brown

    • Add coconut oil to a wide heavy-bottomed pan

    • Furthermore add tomatoes, and watermelon rind and saute till they slightly change color; transfer and cool

    • Add tamarind, required salt and water; cover and cook till rind turns soft

    • Transfer and cool

    • Furthermore, add asafoetida and coconut and wait till roasted ingredients come to room temperature

    • Grind dal and red chilli first

    • add other ingredients and grind well
