Kaju Katli | Cashew burfi | Cashew katli | mudhiri burfi is a delicious sweet prepared with ground cashew. Rich and tasty cashew burfi is an easy Indian sweet recipe that can easily be prepared in a pressure cooker.
The traditional method is time-consuming but this pressure cooker is quick. Within 5 minutes Mundhiri Cake is ready. Great sweet for special occasions, Diwali, parties/get-togethers, etc.
Happy Ugadi to all my lovely readers. I wanted to post a sweet recipe in my last post, but weekend met friends and as usual, I got lazy to draft s new post, so I picked a post from my draft.
Kaju katli is my favorite sweet, well more than me Jagadish loves it. After our marriage whenever we visit out to meet friends he always buys cashew burfi. I always wanted to try it in home, but after hearing the key for the perfect sweet is string consistency, I took a step back.
Last year when my mother-in-law visited us, she got a 2-liter cooker. During 2016 Diwali I was thinking about what sweets to prepare.
My friend Kavitha and I decided to try some sweets together. She invited me to her house, but somehow I couldn't go. She came home with a kitchen food scale and cashew packet; asked me if I have a measuring cup and a proper 2-liter cooker. It was like magic seeing her do the Sweet. I was speechless tasting the cashew burfi. Within a few minutes, Munthiri Paruppu cake was prepared effortlessly.
She kept the entire batch of Kaju katli for us. Should I mention Jagadish and I finished all the sweets that evening😂 I called her, asked for recipe, and made two more batches for distributing to friends and to take for the Diwali potluck.

I have tried couple of direct pressure cooker and Instant pot recipes but this Sweet is next level.

Kaju Katli
Ingredients
- Cashew/ Munthiri Paruppu/ Kaju - 1 cup
- Sugar - 1/2 cup
- Ghee - 1 tsp
- Water - 3 tbsp
- Salt - pinch
Instructions
- In a 2 liter pressure cooker add sugar, salt and water, stir it well. Let the sugar dissolve in water
- Pulse the kaju and make it a powder and keep aside
- Cover the pressure cooker with lid and put the weight
- Grease a aluminum foil with ghee and keep one more aluminum sheet ready
- Turn high flame on small burner and keep the cooker. Cook exactly for 4 whistle
- Switch off the gas stove and release the pressure immediately
- Add the kaju powder to the sugar syrup and mix well
- Close lid and keep it with the weight for exactly 1 minutes
- Add ghee and mix well. Grease your hands with little ghee and knead the cashew dough well (like chappati dough)
- Transfer the dough to the greased aluminum foil. Cover one more greased aluminum foil over the dough ( imagine sandwich, in between two greased aluminum foil the kaju dough is present)
- Roll the cashew dough to your desired thickness. Cut it with pizza cutter/knife into desired shape and enjoy Kaju katli

Notes
- Salt is optional, my mother saws salt enhance the sweetness so added a pinch
- Use a proper 2 little cooker which whistles on/all time. Keep the flame on medium heat
- Releases the pressure immediately else the syrup might lose its consistency. I use fork to release the pressure. Pls be careful while releasing the pressure
- The recipe works perfectly. While trying to take picture/ video for the blog. I lost the consistency few times. This is what I did. If the dough breaks sprinkled little water and switch on the stove and cook till if becomes a non stick mass of dough. If the mixture is wet add a tablespoon of cashew powder extra
- Cardamom powder can be added for extra flavor
- For the mentioned quantity 4 whistles comes around 4 mins
- You can double or alter the recipe. 4 whistle is the key
- Saffron can be added for extra flavour
- You can roll the cashew katli in any surface for me the aluminum foil method suggested by my friend was a breeze
- Avoid grinding the cashew for longtime. Oil in the cashew it might make it sticky
- Cashew flour can also be used for making katli
- Avoid keeping the cooker on maximum flame, sugar syrup might get burnt. Keep it between medium to high, make sure flame is not outside the cooker
- Preferably use 2 liter cooker. If your are using 3 liter cooker make sure quantity is at-least ¼ of the cooker to avoid cooker from getting burnt
- Stir sugar syrup well before closing the lid

- Add the kaju powder to the sugar syrup and mix well
- Close lid and keep it with the weight for exactly 1 minutes (Need not turn the gas)
- Add ghee and mix well. Grease your hands with little ghee and knead the cashew dough well (like chappati dough)
- Transfer the dough to the greased aluminum foil. Cover one more greased aluminum foil over the dough ( imagine sandwich, in between two greased aluminum foil the kaju dough is present)
