Should I sieve almond flour?
Since I have ground the almond flour I didn't sieve. If you are planning to skip grinding, sieve the almond flour and add the fine almond flour. You might need little water for binding
Do I need to grind Almond flour?
Grinding almond flour along with other ingredients helps for easy binding.
Can I use regular sugar?
No always use powdered sugar for no-cook Almond katli. I have used store-bought powdered sugar. If you don't have it, powder the sugar first, then add other ingredients and grind everything together
Can I reduce powdered sugar?
Yes, adjust according to your taste.
Can I skip the rose syrup and prepare Almond peda?
Rose syrup makes Almond katli flavorful. If you are not a big fan of rose flavor skip it and add cardamom powder or any other flavor of your choice. In that case, you might need little water for binding (around 1 tbsp). Add little by little as required
Do I need to add water for binding?
Rose syrup, mixie grinding, plus little ghee helps for pliable dough. I didn't add water but based on the almond flour you use, if needed sprinkle very little water.

I don't have piping mold, how to make a rose impression for rose katli?
Flower impression is optional, you can skip it. You can also use peda mold like milk peda instead or cookie press might also work for impression.

Ingredients
- 1 cup Almond flour
- 1/2 cup powdered sugar + 1 tbsp add extra according to your taste
- 1 tablespoon rose syrup for strong rose flavor add an extra 1 tsp
- 1/2 teaspoon rose essence
- Ghee
Instructions
- Cut a lengthy parchment paper and grease it with ghee, keep aside
Grind well
- Add almond flour, powdered sugar, rose syrup, rose essence into a mixie jar and grind well
- Optionally, add extra powdered sugar according to your taste (i added 1 tbsp), 1 tablespoon of rose syrup for strong rose flavor, and grind everything well
- Transfer the ground mixture into a wide vessel
Knead and Roll
- Grease your hands with ghee and combine the mixture to form a dough
- Place the dough on one side of parchment paper and cover
- Apple even pressure and roll the dough into desired thickness with a chappathi or fondant rolling pin
To make Almond katli
- Cut into soft rose almond katli with a knife or pizza cutter
To make Almond peda
- Use a round cutter or piping nozzle and cut into peda
- Optionally you can make an impression with a piping nozzle or cookie cutter or peda press
- Peda with remaining dough
- Gather the extra left almond mixture and knead to combine the dough
- Roll it on the parchment paper and cut

Hi, I tried to make the ground powder into dough in my hands but it was too crumbly. Therefore I added one spoon of water and then was able to roll it into a ball.
However, maybe as a result of this water, after I cut it, it remained a little sticky and not hard enough to be a katli consistency. Any advice? Should I not have added water to roll it, maybe should have added ghee or something else?
