Rich and tasty Palak Paneer in Instant pot. Gravy can be prepared in less than 30 minutes using Instant pot (Electric Pressure Cooker). Spinach paneer gravy goes well with Roti/ paratha/ variety rice etc. Every since I resumed blogging after my break, I have been posting recipes of same category for a month. This will be yet another series for gravy, chutney and rice accompaniment. I always focus on less cooking time recipes, so lot of easy and simple recipes are coming up in TMF. Ever since I started using IP I have been addicted for it. It makes cooking super quick and tasty. Not only cooking but also my cooking surface is super clean. If I make gravy in stove top, either gravy with be all over my cooktop while boiling if I open and cook, or I will get hot gravy spilled on my hand when I try to stir😊 Thanks to Instant pot no more such scenes in my home🤣 My son loves paneer - the moment I thought of posting side dish,Instant Pot Palak Paneer gravy was the first thing that came to my mind. There used to be a time when I avoided paneer, but now I began to include protein in everyday diet. Paneer has got some fat, but the protein in the paneer made me to say a big yes for it. Usually, when I cook for guests, I add heavy cream for my gravy to make it rich, and when I prepare on an everyday basis I go with evaporated milk. A few years back when I was out of both, tried adding extra milk and yes instant Pot Palak Paneer came out really good. I couldn’t believe the fact that without cream we can make a tasty North Indian side dish at home. Believe me, the instant Pot Palak Paneer was like a restaurant-style paneer dish with less fat.

Some people won’t prefer cooking spinach by closing it with a lid. If you think so, you can skip the manual mode of cooking and use the sauté mode option. In that case, it might take a little longer time for cooking. Spinach is less popular among kids - some moms use Popeye cartoon to make their kids eat spinach, but for my son, paneer works, so with paneer, he won’t even realize the ground spinach. 30 minutes is overall including cutting vegetables and time for the spinach to cook down. If you have kept everything ready in advance the Instant Pot Palak Paneer can be prepared sooner.

Instant Pot Palak Paneer
Ingredients
- Spinach - 7 cup
- Paneer - 400g cut into pieces
- Onion - 1 big
- Garlic - 4
- Ginger - 1 tbsp
- Milk - 1 cup
- Water - 2 cup
- Green chilli - 1
- Jalapenos - 1/2 remove seeds and roughly chopped
- Salt - as needed
- Sugar - pinch
- Poppy seed - 1/4 tsp
- Fennel seed - 1/4 tsp
- Garam masala - 1/2 tsp
- Kitchen king masala - 1/2 tsp
- Chilli powder - 1/4 tsp
- Cashew - 3
- Butter - 1 tbsp
- Oil - 1/2 tbsp
Instructions
- Add oil to the instant pot and turn on IP in saute mode and the oil gets hot
- Add fennel seeds and poppy seeds; let it splutter
- Add onion, garlic, ginger, salt and saute for 2-3 minutes. Sprinkle some water if onions stick to the pot
- Add a pinch of sugar and cook till onions are translucent
- Add cashew, spinach saute till the spinach is soft and cooked
- Add all the masals and cook for a minute; turn off IP. Let it cook down
- Grind the mixture into a fine paste without adding water

- In the instant pot add butter, ground paste, 2 cups of water,salt (if required) and paneer and cook in maual mode for 3 minutes high temperature. Release the pressure immediately
- Open the IP carefully add jalapenos and milk; cook for 5 minutes. Palak paneer is ready

Notes
- 1/4 cup of Heavy cream/ evaporated milk can be added instead of milk
- Palak paneer can be made in pan on stove instead of Instant pot
- Adjust the spice level according to your spice level
- Tomatoes can be added for extra flavour
- Before closing the IP make sure paneer is not stick to the bottom otherwise paneer might become brown and stick to the pan
- While sauting onion if the onion stick to the pan and become brown, sprinkle some water and cook
- Whole garam masala can be used for extra flavour

9. No need to soften the paneer in hot water. Keep the paneer out for few minutes and cook directly. Paneer will be soft
