    Tamil Nadu-style Kaara chutney

    Kara is the Tamil word for spicy food. A spicy version of  Tomato onion  Chutney is commonly referred to as  Kara Chutney.

    Back in Chennai days t.Nagar Kaiyendhi Bhavan street food is one of my favorites.  Holding the plate (kaiyendhi) and enjoying the street-side shop food is a special feel. Among all the items suda suda idli with kara chutney is extra special

    For Spicy tomato onion chutney, You can add a combination of big onion and a small onion. You can also add big onion instead of a small onion

    Always use ripe tomatoes

    Ripe tomatoes make the best Kara Chutney. Avoid raw tomato. The spiciness of the chilies with sour tomatoes makes the chutney tasty

    why Kashmiri chilli powder for road Kadai kaara chutney? 

    Kashmiri chilli powder gives amazing color to the chutney so I would highly recommend that. If you are not a big fan of red color chutney you can regular red chilli

    Should I soak red chilli?

    If you are using red chilli always soak them in water till they turn soft. Discard the water then grind

    Kara chutney

    Ingredients

    • 1 + 1/2 cup small onions
    • 2 cups ripe tomatoes
    • 10 small garlic
    • 2 + 1/2 tablespoon Kashmiri chilli powder
    • Required salt
    • small piece Jaggery

    To temper

    • 2 tablespoon sesame oil
    • 1/4 teaspoon mustard seeds
    • Curry leaves few

    Instructions

    • Firstly add onion, tomatoes, garlic, salt, Kashmiri chilli powder, and a pinch of jaggery to a mixie jar and pulse without adding water
    • Add oil to a wide heavy-bottomed pan and heat the oil
    • When the oil is hot add mustard seeds and lets them splutter
    • Add curry leaves and mix well
    • Furthermore, add ground mixture; mix well, and saute for 3 minutes
    • Add water and cook on medium flame for 15-20 minutes till chutney comes to desired consistency

    Notes

    1. I would recommend small onion for Spicy tomato onion chutney. You can add a combination of big onion and small onion but avoid adding just big onion
