    How long should I grind cashew / pista?

    Grounding cashews and pista help with the dough texture. It makes it easy to roll. However, avoid over-grinding as it oozes out oil and makes the peda oily

    Yes, you can use powdered sugar instead of regular sugar. In that case, grind cashews and pista separately, then grind with all other ingredients

    What is a Kaju Pista Roll made of?

    Is Kaju Pista Roll the same as Kaju Katli? 

     No. Kaju Katli is a flat diamond-shaped sweet made only with cashew, while Kaju Pista Roll includes a pistachio filling and is rolled into a log shape.

    Can I make Kaju Pista Roll without food coloring? 

    Yes! You can use natural ingredients like saffron or beetroot juice for color, or skip it entirely.

    How long does a Kaju Pista Roll stay fresh? 

     It stays fresh for up to 7–10 days when stored in an airtight container at room temperature.

    Can I skip food coloring?

    Yes, food color is optional; you can skip according to your taste.

    Should I refrigerate Kaju pista rolls?

    Room temperature cashew pista rolls look soft. Refrigerating will make it firm. Refrigerating is optional; you can do it according to your preferred texture.

    Can I cut cashew pistachio rolls immediately?

    After rolling, it looks soft. Freezing makes it firm and easy to cut

    Ingredients

    Cashew dough

    • 1 cup cashews
    • 1/2 cup sugar
    • 1/4 teaspoon cardamom powder
    • 2 tablespoon milk powder
    • 2 tablespoon water

    Pista dough

    • 1/2 cup pista
    • 1/4 cup sugar
    • 1/8 teaspoon kewra water
    • 1 tablespoon water
    • 1 tablespoon milk powder

    Instructions

    • Cut a lengthy parchment paper and grease it with ghee, keep aside
    • Cashew dough
    • Add cashews, sugar, cardamom powder into a mixie jar and grind into a fine powder
    • Furthermore add water, milk powder; grind to combine everything
    • Transfer the ground mixture into a wide vessel
    • Pista dough
    • Add pistachio and sugar into a mixie jar and grind into a fine powder
    • Furthermore add water, milk powder, a pinch of food color, and kewra water; grind to combine everything
    • Transfer the ground mixture into a wide vessel
    • Knead and Roll
    • Knead the pistachio dough
    • Roll a portion of the dough into a thin tube
    • Knead a portion of cashew dough
    • Flatten the dough and do even rolling
    • Place pistachio dough on top of the cashew dough. cut the extra pista dough and save it for later
    • Cover and seal. Roll to your desired thickness
    • Cut and work in batches. Roll to your desired thickness
    • Repeat for other batches
    • Freeze and cut
    • Freeze it for 30 minutes
    • Use a sharp knife and cut it into desired thickness. YOu can refrigerate or store at room temperature and enjoy Cashew pista rolls
