    Murungai keerai Adai with ragi  - south Indian tiffin

    Adai is a traditional South Indian breakfast recipe. Healthy tasty Indian crepe is a filling breakfast option for school kids. In our home, we also like having Adai for dinner.

    What tastes best with Adai?

    Country sugar/ jaggery are the other most popular sides for Adai dosa. In our home, we like pairing Adai with Idli podi and tamarind-based Kuzhambu.

    Can I use store-bought ragi flour?

    I have used store-bought finger millet flour. No need to roast them. You can just use it as is

    Can I skip rice flour?

    It gives the perfect balance of crispness at the same time soft (not dense) Adai that my kids and our family enjoy

    Can I skip murungai keerai?

    Yes but it is a healthy addition. Instead of murungai keerai you can use carrots, cabbage, etc.

    Should I discard chilli seeds

    It is optional to make it kids -friendly spice I prefer doing I prefer removing

    Should I ferment Adai dough?

    Adai dough doesn't require fermentation. You can prepare Adai right after mixing. I prefer covering it to avoid the dough getting dry

    Can I skip the small onion?

    Yes, a small onion is optional. You can also use regular. It is nice so I recommend it. Sauteing is not required as the onion gets cooked in adai

    Why Sesame oil for the Adai recipe?

    It gives the best flavor but you can add any oil of your choice.

    Indian tiffin recipe

    Ingredients:

    Dough

    1 cup ragi flour

    2 tablespoon rice flour

    1 teaspoon sesame seeds

    1/2 teaspoon salt

    1 cup drumstick leaves

    1/2 cup small onion

    1 teaspoon sesame seeds

    1/4 cup coconut

    1 Green chilli

    1/2 cup water

    1 teaspoon Ginger

    To prepare Adai

    sesame oil

    How to make Murungai keerai Ragi Adai with step-by-step pictures:

    • First, Add all the ingredients except water in a wide vessel; mix well

    • Add water; mix well and knead; till the dough comes together

    • Drizzle oil on top

    • Cover and rest

    • Grease parchment paper or banana leaf

    • Roll a portion of the dough

    • Press and flatten. Make a dent in the center

    • Heat dosa tawa
    • Add sesame oil and cook both sides 

    • Serve hot
