    Mint rice | Pudhina Rice

    Pudhina rice is a tasty flavorful variety rice. This rice is perfect for kids/adults lunch box . Pudhina rice can be prepared within 20 minutes - perfect for busy morning

    Ever since my son started going to elementary school planning his every day lunch is one of my biggest concerns. If I give options, he would ask for lemon rice, Keerai kootu or paneer rice every day. I try to included veggies and protein in his diet, but I recently realized herbs are the last thing I focus.

    If you are following me on Instagram you would have noticed my recent love for greens. I try to include green veggies + protein + carb in all my meals. When it comes to to greens my default choice is spinach. Recently I got a pack of mint. Usually I make chutney   add mint to Channa pulav, Ghee rice , orange pulav, biryani For a change this time, I made pudhina rice.

    When I was thinking how to make pudhina rice, I remembered  Amma’s coriander rice. Inspired from that I thought of trying mint rice similarly. Since mint is overpowering I mixed coriander leaves so that my son won’t refuse pudhina rice . Sweet corn pulav is our family’s favorite. This mint rice is prepared with the similar base, except for coconut.

    One pot recipes are my favorites. Easy to cook and tasty as well. Since I used basmati rice soaking took sometime but pudhina rice was cooked within 20 minutes. Perfect for weekday lunchbox.

    I drafted this post 2 months back when I was packing lunch for my husband and kid. Now everybody is in home. Today I made this for lunch and thought I didn’t post it yet in blog😊

    Pudhina Rice

    Ingredients

    • Mint - 1 bunch 20 grams
    • Coriander leaves - 1/4 cup
    • Onion - 1/4 cup
    • Garlic - 1
    • Ginnger - 1/2 inch thin piece
    • Green Chilli - 1/2
    • Poppy seeds - 1/4 tsp
    • Fennel seeds - 1/4 tsp
    • Ghee - 2 teaspoon + one drop
    • Lemon juice - 1/4 tsp
    • Basmati rice - 1/4 cup soaked
    • Turmeric powder - pinch
    • Salt - as needed

    Instructions

    • Soak basmati rice in hot water for 30 minutes
    • In a pan add 1 teaspoon of ghee. When the ghee is hot add poppy seeds and fennel seeds; after it splutter
    • Add onion, garlic and ginger; sauté till onions are translucent
    • Add a pinch of turmeric powder and cook for a minute. Switch off and let it cool down
    • Add mint and coriander leaves
    • Grind into a paste with little water
    • Strain the rice and keep aside
    • In a pressure cooker add 1 teaspoon of ghee and ground mint paste. Sauté for a minute. Add rice and sauté. Add salt and give a quick mix
    • Add water and let it boil
    • Add a drop of ghee and pressure cooker for 2 whistles. Simmer for a minute and switch off
    • After the pressure releases naturally fluff the rice
    • Add lemon juice and mix well. Pudhina rice is ready serve with salna/ tomato raita

    Notes

    1. Vegetables of your choice can be added for the rice
    2. Adjust the spice level according to your preference
    3. Water required may vary according to your basmati rice
    4. Cashew, almonds etc. can be added for extra flavour
