Can I pressure cook sweet potatoes for the south indian style poriyal
Pressure cooking might alter the sweet potato texture. I would recommend steam cooking as it gives a perfect sweet potato curry
Rough chopping
I generally rough chop the sweet potatoes into big pieces, Steam cook them, peel the skin, and chop into bite-sized piece.
Cooking time
depends on the sweet potato variety, also size. Cook till it is fork tender

For the perfect curry texture, I recommend a wide pan so that sweet potatoes don't overlap and cook evenly.
CAN I COOK potato roast ON A HIGH FLAME?
No, low- medium flame is perfect. An iron pan retains the heat so it will be perfect

CURRY POWDER
I used idli milagai podi. Instead, you can prepare podi like kovakkai, or Kalyana potato, or chettinad potato. You can also use sambar powder, or sundal podi instead
WHAT SHOULD BE THE TEXTURE OF THE PODI?
In our home, we generally prefer slightly coarse ground homemade podi as it gives a nice texture to the podi. You can ground the curry powder fine or coarse according to your preference.
CAN I ADD ONION FOR sweet potato podi kari?
Yes, you can add onion, garlic, ginger, etc. According to your taste.

Steam cook
1 big sweet potato
Salt
Ginger powder
Temper
1+1/2 tablespoon coconut oil
1/2 teaspoon mustard seeds
1 tablespoon urad dal
Curry leaves
1 tablespoon chana dal
asafoetida
Poriyal
3 tablespoon idli milagai podi
1/2 teaspoon kashmiri chilli powder
1 tablespoon coconut
How to make sweet potato poriyal with step-by-step pictures
- steam cook roughly chopped sweet potatoes for 5 minutes
- add salt and ginger powder; steam cook for 5 more minutes
- cool and peel the skin. Cut into bite-sized portions
- heat the coconut oil
- temper mustard seeds, urad dal, chana dal, and curry leaves
- add Asafoetida; mix well
- add sweet potatoes and salt; quick mix
- add idli milagai podi and kashmiri chilli powder; Sauté for 3 minutes
- add coconut and sauté for a minute
