    loaded with vegetables one pot of Karnataka-style vegetables is so flavorful.  Freshly ground masala gives amazing flavor to the rice bath. Perfect for a weekday meal. It is also a tasty main course for get together, dinner parties, etc.

    Tips for masala

    • Always grind the masala a few minutes before using else it change color
    • Adjust chilli according to your taste
    • Star anise or any other whole gram masala of your choice can be added
    • Coconut gives amazing flavor don't skip
    • Avoid adding more water while grinding, it might alter the rice texture

    What is Karnataka style pulav

    Karnataka-style vegetable palav, also known as "Veg Pulao" or "Palav," is a popular rice dish from the southern Indian state of Karnataka. It is similar to Tarkari Pulav but has its own distinct flavors and ingredients.

    RICE FOR  mixed veg BRIYANI

    I have used sona masoori rice. You can use raw rice or any variety of rice according to your choice. Adjust water accordingly.

    SHOULD I SOAK RICE?

    I soaked the rice for 30 minutes. adjust the soaking time according to the rice variety you use.

    CAN I USE ghee FOR COOKING?

    yes, you can use ghee. Adjust the spice accordingly

    cam I skip tomato?

    Tomatoes give good flavor and also balance the mint and coriander taste and color. I would recommend using it

    SIDE DISH FOR karanataka palav

    Veg palav goes well with raita varieties, gutti vankaya kura, kathirikai chops, plain kurma,  mirchi salan and raita

    OTHER VEGETABLEiryani rice bhath

    you can use vegetables like corn, capsicum, knol khol, etc for rice.

    CAN I COOK cooker veg pulav IN THE INSTANT POT?

    Yes, for the instant pot version, cook for 8 minutes and do natural pressure release. 

    VARIETY RICE

    PRESSURE COOKER RECIPES

    Ingredients

    To soak

     1 cup sona masoori rice

    water to soak

    ground masala

    Handful of mint and coriander leaves

    2 green chilli

    4 garlic

    Small piece ginger 

    1/2 cup onion

    1 clove

    Cinnamon small piece

    1 cardamom

    1/4 cup coconut

    1/2 teaspoon poppy seeds

    1 clove

    1/2 teaspoon fennel seeds

    Karnataka vegetable palav

    2 tablespoon peanut oil

    1/2 teaspoon cumin seeds

    1 bay leaf

    3/4 cup onion

    1 tomato

    1/4 teaspoon turmeric powder

    Required salt

    250 grams mixed vegetables 

    2 cups Water 

    1/2 teaspoon lemon juice

    how to make Karnataka veg palav in a pressure cooker with step-by-step pictures

    • First, wash and soak for 30 minutes

    • Add the ingredients mentioned under "ground masala" and water; grind well

    • Add oil to the pressure cooker

    • Turn on the stove to medium flame and heat

    • Add bay leaf and cumin seeds; splutter

    • Furthermore, add onion; mix well and saute till onion turns translucent

    • Add tomato; mix well and saute for 1 minute

    • Furthermore, add turmeric powder and salt; mix well and saute till tomatoes turn mushy

    • Add ground masala; saute for 2 minutes

    • Furthermore, add carrots, beans, frozen peas, and potato; mix well and cook for 2 minutes

    • Add water and bring to boil

    • Furthermore, add soaked rice; mix well

    • Bring to a frothy boil

    • pressure cook for two whistles; turn off the stove

    • After the pressure subsides naturally, open the cooker

    • Gently fluff the rice

    • Finally, add lemon juice; serve hot
