One Pot Mixed Vegetable Rice

loaded with vegetables one pot grandma style rice is so flavorful.  Perfect for a weekday meal. It is also a tasty main course for get-togethers, dinner parties, etc.

Vegetables for the rice

I have used beetroot, carrot, beans, potato, and cabbage. You can also add peas, corn, sweet potato, knol khol, or any veggies you choose.

Can I make no onion vegetable Rice

Yes, skip the onion and follow the rest of the recipe.

RICE FOR kai sadham

I have used sona masoori rice. You can use raw rice or any variety of rice according to your choice. Adjust water accordingly.

SHOULD I SOAK RICE?

I soaked the rice for 30 minutes. adjust the soaking time according to the rice variety you use. if you are making it for school Lunch you can ever soak it overnight

CAN I USE oil FOR COOKING?

yes, you can use oil. Adjust the spice accordingly

can I add tomato?

I generally follow my grandmother's recipe so I won't add tomatoes. You can tomatoes in that case adjust the spice accordingly.

Veg rice  goes well with  gutti vankaya kura, kathirikai chops, plain kurmamirchi salan, and raita

CAN I COOK cooker kai Kari sadam IN THE INSTANT POT?

Yes, for the instant pot version, cook for 5 minutes and do natural pressure release. 

VARIETY RICE

PRESSURE COOKER RECIPES

Ingredients

To soak

 ½ cup sona masoori rice

water to soak

vegetable rice

1 tablespoon ghee

8 cashews

½ teaspoon cumin seeds

2 green chilli

½ cup onion

pinch of turmeric powder

Required salt

1 tsp sambar powder

200 grams of mixed vegetables 

1 cup Water 

how to make Tamilnadu-style veg sadam in a pressure cooker with step-by-step pictures

  • First, wash and soak for 30 minutes

  • Drain water and keep it aside

Veg rice bath

  • Add ghee to the pressure cooker

  • Turn on the stove to medium flame and heat

  • Add cashews and roast golden brown; keep aside

  • Furthermore, add onion and cumin seeds; Mix well

  • Add green chilli; mix well and saute till onion turns translucent

  • Furthermore, add mixed vegetables; saute for 2 minutes

  • Add turmeric powder, sambar powder, and salt; mix well and saute for 2 minutes

  • Furthermore add rice and saute for a minute

  • Add water and bring to a frothy boil

  • Furthermore, add sesame oil and make sure nothing is stuck to the cooker

  • pressure cook for two whistles; turn off the stove

  • After the pressure subsides naturally, open the cooker
  • Gently fluff the rice

  • Transfer to a plate and finally add roasted cashews
