The best part of these Christmas bake is they just take less than 5 minutes to prepare the batter. We don’t need a whisk or electric mixer for the batter, all we need are a mixing bowl and a spatula.

    Condensed milk - creates the magic to the squares

    I love recipes based on condensed milk. It gives an amazing flavor to any recipe. This candied shortbread is all about condensed milk, dried fruits, and nuts flavor😊 if you are looking for sweets with minimal ingredients these cashew squares are perfect.  Condensed milk gives richness and sweetness to the tutti frutti bite.

    Can I make these dried fruits and nuts squares into Christmas shortbread cookies?

    As I mentioned in the chocolate chip cookie, you can easily convert the squares into cookies. Drop a tablespoon of batter on a greased cookie sheet and bake them for 10 -12 mins until they turn slightly turn brown at the bottom. The cookie will be a little firm on the outside and softer in the center. 

    Will it taste like fudge ?

    It is a soft-baked goodie but won't taste like white chocolate fudge. Somewhere between burfi and bar texture

     

    How to get firm shortbread-like squares?

    I have used an 8* 8 square pan for baking. For this quantity, it gives soft candied squares. If you prefer shortbread candied shortbread  use a bigger pan. I have tried baking shortbread square with half of the mentioned quantity in the 8*8  square pan and it was towards the cookie texture. Alternatively, you can also spoon the batter for cookie

    Can I use Whole wheat flour?

    You can use wheat flour but the taste might slightly vary.

    Ingredients

    • 1 can Condensed milk
    • 155 grams 1+ 1/4 cup all-purpose flour
    • 10 cashews
    • 2 tablespoon raisins
    • 2 tablespoon sliced almonds
    • 1 tablespoon raisins or dried cranberry
    • 1/4 tutti frutti

    Topping

    • 1 tablespoon + 1 teaspoon tutti frutti
    • 1 tablespoon crushed almonds
    • 10 raisins

    Instructions

    • Preheat the oven to  320 F
    • Line an 8 x 8-inch square baking pan with parchment paper and grease with butter spray
    • In a mixing bowl add flour, cashews, raisins, almonds, and tutti frutti; mix well
    • furthermore, add  1tbsp of raisins and condensed milk; mix well to make a lump free smooth batter
    • Pour into the prepared baking pan and tap to remove air bubbles
    • Sprinkle tutti frutti, raisins, and sliced almonds
    • Bake on the center rack for 20 minutes or until a toothpick inserted comes out clean
    • Cool in the pan for 10 minutes
    • Cut into squares and enjoy

    Notes

    1. Walnuts, pista, pecans, or any nuts of choice can be used
    2. Cranberry any dry fruit of your choice can be used
    3. For shortbread cookie-like texture use a bigger square pan
    4. Cardamom powder/vanilla extract can be used
    5. you can sprinkle; sugar
    6. squares stay good for 2 weeks
