Rava Kesari recipe
Kesari is one of my favorite easiest delicious Indian sweet recipes. For sudden guests or quick sweet / get-together/party, this is the default option. For homemade Kesari recipes like traditional Kesari recipes and paal Kesari I use ghee. For Kalyana Kesari texture secret ingredient is little oil, it makes a huge difference. Secret for kalyana kesari
Whenever I taste catering Kesari at a wedding or any special occasion, special taste and texture always impress me. It resembles a halwa texture, every spoon is melt in the mouth. For a perfect wedding, Kesari always roast Rava till they turn aromatic, add double the amount of sugar, at least 1/2 quantity of ghee compared to Rava, and never skip oil

It helps to easily identify till how long we should roast roast. always roast in medium flame; mix well in between

- you can skip turmeric powder and use food color
- if you are using fine rava; skip pulsing
- you can use pineapple, or any fruits of your choice for variation
- Kesari premix stays good for a month. Kesari stays good for 2 days
Will the Kesari smell oily?
No, Kesari won’t smell the oil. Always use flavorless oil for the best taste. The amount of ghee we add makes the Kesari aromatic
Can I add rose essence?
Yes if you like rose essence flavor add it after turning off the stove, mix gently.
Will kesari gets cooked in hot water
you can cook kesari in microwave or stove top. i experimented by resting premix in hot water; but i was not satisfied with that taste so i recommend cookinh

To roast
1/4 cup ghee
3/4 cup rava
1/4 cup cashew
1/2 teaspoon oil
2 Cardamom
1/8 teaspoon turmeric powder
To grind
1+1/2 cup sugar
Saffron
Kesari
1/2 cup kesari premix
1 cup water
1/2 tablespoon ghee
how to make Rava Kesari premix with step-by-step pictures
- Add ghee and melt
- Add rava, cashew, cardamom, and oil; mix well and roast till nuts turn golden brown and rava turns aromatic
- Turn off the stove
- Add turmeric powder; mix well and Transfer and cool
- Add sugar, saffron; grind
- Add rava and pulse once
Kesari
- Add ghee, Kesari premix, and water; cover and cook for 3 minutes
- Open cook for 2 minutes
- Simmer for a minute or till Kesari comes together
