    What is special about military hotel style Donne biryani 

    ground masala and marinated mushroom give the unique taste to the Donne biryani. I have made donne biryani with mushroom, but you can use any vegetables you choose.

    Can I skip marination?

    You can sauté mushrooms with curd, chilli powder, and turmeric powder,r but marinating with curd and spice makes it extra flavorful so I would recommend it. 

    Chilli for the biryani 

    The color of the biryani depends on the chilli variety. I used regular chilli powder and green chilli.

    Can I skip the curd and use tomatoes?

    Traditionally, curd is used for Bangalore-style biryani. However, you can also use tomato and lemon juice for homestyle biryani.

    Always sauté curd on low flame

    To avoid curdling, always saute in a low flame. After adding water, boil on a medium flame.

    Rice for Bangalore style Donne briyani

    I have used seeraga samba rice as it is traditionally used. You can use any variety of rice according to your choice. Adjust water accordingly.

    Should I soak rice?

    Yes, soaking helps with fast cooking.

    Can I skip ghee?

    yes, you can use just oil. Ghee gives amazing flavor to the biryani so I prefer using it.

    Biryani goes well with raita varieties,gutti vankaya kura, kathirikai chops, plain kurma,  mirchi salan, and raita

    PRESSURE COOKER RECIPES

    CURD BASED RECIPES IN TMF

    Ingredients

    1 cup seeraga samba rice

    Marinate

    175 g mushroom

    1/4 cup curd

    1/2 teaspoon chilli powder

    1/4 teaspoon turmeric powder

    1/2 teaspoon coriander powder

    Ground mixture

    1/2 tablespoon peanut oil

    Clove

    Cinnamon

    1/4 teaspoon pepper

    2 green chilli

    1/2 cup onion

    5 garlic

    Ginger

    Coriander leaves

    Mint leaves

    1/2 teaspoon cumin seeds

    Biryani

    1 tablespoon peanut oil

    Salt

    Whole garam masala

    1/2 cup onion

    2 cups water

    1 teaspoon ghee

    How to make Donne mushroom biryani with step-by-step pictures 

    • First, Soak the seeraga samba Rice for 10 minutes

    • Marinate mushroom, curd, turmeric powder, coriander powder, chilli powder; rest 10 minutes

    • Saute cinnamon, clove, pepper, green chilli, onion, ginger and garlic in peanut oil

    • Add coriander leaves, curry leaves, and cumin seeds; cool and grind

    • Add oil and saute garam masala

    • add onion, saute onion until translucent

    • add ground mixture and marinated mushrooms; saute for 2 minutes

    •  add rice, water, and salt ; boil well

    • cover and cook for 5 minutes

    • mix well and add ghee

    • Simmer to lowest flame and mix well
    • Cover with a plate. Place a heavy weight on top of
    • Cook for 15 minutes

    • Carefully open and fluff the rice
