Coriander Rice | Kothamalli Sadam

 Coriander rice is Flavorful variety rice prepared with coriander leaves, peas and spice mix.  Kothamalli sadam is perfect for lunch box.  Kids will love this colorful coriander rice.

I love coriander flavour. As a child I always wondered, how an ingredient added towards end of the cooking gives a special flavour to the dish. After every grocery shopping,  I always see a small bunch of coriander leaves and curry leaves in the basket, those days I used to think these ingredients are like salt which should be added in all cooking 🙂 

 When my Amma came here I once bought two bunch of coriander leaves by mistake. While keeping the things in fridge I noticed it, as it might get spoiled in some days, I wanted to finish it soon. I was asking my Amma to prepare some coriander based dish.

Amma suggested few options but I opted for this coriander rice. She prepared this rice for lunch, It was Flavorful and I liked the fact that it was super easy to make. She sauted some onion and added but I skipped it. I added some peas as it complemented  the green color and gave some texture to the rice. On fasting days you can make no onion- no garlic coriander rice too.

This is great option when you have leftover rice within few minutes quick healthy rice can be prepared. Green color will definitely makes the kids lunch box extra special

Ingredients:

Cooked Rice – 2 cup (I used basmati, regular rice can also be used)
Coriander leaves – 1 bunch, washed and cleaned
Peas – 1/4 cup
Ginger garlic paste – 1/2 tsp
Green chilli – 2 (Adjust according to your spice level)
Salt – as needed
To temper:
Oil/ Butter – 1/2 tbsp
Cardamom Pods – 2
Cinnamon Stick – 1/4 stick
Star Ansie – 1
Bay leaf – 1

Method:

  • Soak basmati rice for 15 minutes in Luke warm water. Cook with 1:2 water, fluff it and keep aside in a wide pan
  • Grind coriander leaves and  green chillies with little water into a smooth semi solid paste
  • Add oil/butter to the pan, when it becomes hot add the items given under “To temper”  and cook for a few seconds
  • Add the ground coriander – chilli paste, cook in medium flame for a minute
  • Add peas and salt; cook till the water evaporates and peas is cooked
  • Add the cooked paste into the pan containing rice and mix well. Check for seasoning and serve warm with raita/ gravy/ chips

Notes

1. After cooking, the coriander paste can be added the soaked rice and cook with 1:2 water
2. Caramelised/sautéed onion can be added for extra flavour
3. Can skip ginger garlic paste and prepare a no onion no garlic version of Coriander rice
4. Thin coconut milk can be added while cooking rice for extra flavour
5. Reader Ramona DSouza tried Coriander rice and suggested, " Adding coconut with coriander and Chilli taste enhances the taste"

    Coriander is delicious. I keep trying to grow it as it’s so expensive to buy, but the plants always go to seed before they produce much leaf – hey ho!
