    Quinoa Crustless Quiche , Quinoa Quiche , Spinach Quiche , Quinoa quiche , Crustless quiche prepared with savory custard, quinoa spinach, and cheese. Loaded with egg and quinoa, this is a great protein-rich meal.

    This Quiche goes well during any meal.  The food network channel got me acquainted with Quiche. Most of the quiche versions I saw had a pie crust. I don't have a pie pan and didn't want to invest in that, so I didn't try Quiche for a long time. This year for Easter I saw a lot of egg-based recipes, one Kale Quinoa Crustless Quiche recipe in food52 pulled my attention. It's a Crust-less Quiche so I need not buy a pie pan. With lots of eggs - Spinach Quiche crustless quiche I am sure this will attract my husband. Quinoa additions was one more thing that pulled my attention. I recently started experimenting with quinoa and this one was a interesting way to have quinoa. Quinoa Idli, Quinoa bisi Bele bath, Quinoa Adai, Quinoa parfait  quinoa lemon, I had all the ingredients except Kale at home, when I was thinking about alternatives for kale, some other green in my fridge pulled my attention. I tried spinach quiche in my cake pan.  After my Omelette Muffin, I tried a recipe with lots of eggs so I was little concerned with the taste but it turned out yum. I was not familiar whether it's breakfast/Lunch/dinner food, since it was filling meal we had it for lunch. Its a great protein rich food for the toddler too.     Ingredients

    • Quinoa - 1/2 cup
    • Water - 1 cup
    • Olive oil - 2tbsp
    • Spinach - 2 cups washed and roughly chopped
    • Onion - 1
    • Cheddar cheese - 1/2 cup
    • Cream cheese - 4 tbsp
    • Egg - 4
    • Salt and pepper - as needed
    • Brown sugar - pinch optional

    Instructions

    • Preheat the oven to 350 degree Fahrenheit and place a butter paper/parchement in cake pan and butter/spray the cake pan (original recipe called for pie dish, I didn't have pie dish so I used my 9 inch cake pan instead). I cut the parchment more than dimension of cake pan as I was worried about unfolding the quiche but it was very easy so its not required
    • Wash and rinse the quinoa. In a sauce pan add quinoa and water and bring to boil on medium heat. Simmer and cook till its done; switch off and set aside
    • In a separate pan add little olive oil and sauté the onions on medium heat till its done. Add Brown sugar and mix well, and cook for 30 seconds and switch off
    • Set aside. Meanwhile, start to caramelize the onions. Heat the olive oil in a large saute on medium heat. When the oil is shimmering, add the onions. Slowly cook until the onions are soft and browned. Remove the onions from the pan, and place them in a large mixing bowl
    • Rinse the spinach well in water. Boil water with pinch of sugar and salt. Add the spinach to the boiling water. Cook and switch off the flame, after 3-5 mins drain and quickly pour cold water over the spinach. Allow the spinach to cool and squeeze out all extra liquid using hand/sieve/ clean dish towel (I used my hands as it wotk best). Add the spinach, cooked quinoa, cream cheese and cheddar to the mixing bowl and combine well
    • In a separate small bowl whisk the eggs and beat well; add it to the quinoa-spinach mixture along with salt and pepper. Mix gently untill everything is combined
    • Pour the mixture in the prepared cake pan. Bake for about 44- 46 minutes (mine got done after 44 minutes) until the top is golden and the quiche has started to pull away from the edge of the baking dish. Serve it hot/warm according to the preference

    Notes

    1.  Garlic can be sautéd with onion for extra flavor
    2. Kale or any other fresh/frozen vegetable can be used instead of spinach
    3.  Spice Powder like Cumin, cayenne, coriander, etc can be used for extra flavoring. Indian spice mix like garam Masala, pav bhaji, channa Masala, coriander Powder, rajma Masala Powder, etc. Can also be used

        Rachana, I haven't tried Eggless Quiche version. I am sorry I couldn't give you alternate option. While reading about Quiche I saw a version with tofu (without eggs). Try googling tofu Quiche without eegg, I believe thr should be a way.
