Ever since my childhood days I love Laddu, and my Amma prepares a batch of rava ladoo and puts it in a box. After returning from school I do frequent visits to kitchen and snack all evening. Now a days Almond laddu and wheat and nut laddu are my son’s favorite
During navaratri, for prasadam (offering) to God I prepared Maladu. As pottukadalai is good for health I thought of preparing Ladoo with it, so that my son can enjoy a healthy sweet. Usually white sugar is used while preparing ladoo, I used light brown sugar instead. This week we are going to eat lot of sweets.
My mother-in-law reached my Bro-in-law place yesterday and she told me she will courier sweets and Savories today. We are going to enjoy my Amma's Coconut Burfi, my favorite "Sri Krishna Sweets" Mysurpak, Patti's (Jagadish's Patti) rava ladoo, Boondi Laddu, Mullu Murukku, Thattai, Thenkuzhulal:-) Since yesterday I am dreaming about all dishes. I guess this year I don't have to have to cook any bakshanam (Sweet and savory):-)
Maladu can also be prepared with leftover ghee residue like Nei kasandu Urundai
Maladu is a quick sweet which can be prepared within 15 minutes. Maladu Stays good for upto a week. pottukadalai Burfi is snother tasty protien rich sweet with pottukadalai.
Maa Ladoo / Maladu / Pottukadalai Laddu | Roasted Gram Balls
Ingredients
- 1 cup Pottukadalai /Roasted Gram
- 3/4 cup sugar Adjust according to your Sweetness
- 1/2 teaspoon Cardamom Powder
- 1/3 cup Ghee
- Salt - pinch
Instructions
- In a mixie jar add pottukadalai and grind into a fine powder
- Add sugar to the same jar and grind into fine Powder, giving regular interval inbetween
- In a wide pan add 2 tablespoon of ghee and when the ghee is hot add cashews; saute them into golden brown
- Turn down the flame of tow and add ground mixture and 3 tablespoon of hot melted ghee
- Turn off the stove and mix well, the mixture will comes together
- If mixture is not binding well add little more ghee
- Let the mixture turns warm, Do not allow the mixture to cool down completely
- Grease your hands with little ghee and take a small portion of the dough
- Roll well and transfer to the plate
- After the Maladu is cool transfer into a airtight container

Notes
- Jaggery/ brown sugar can be used instead of white sugar. Grate the jaggery and pulse it well and add it to the roasted gram flour
- Dates can be used instead of sugar (Refer Nuts & Dates Ladoo)
- Confectionery (Powdered) sugar can be used instead lg powderedimg the sugar
- Cardamom pods can be used instead of Powder
- Turbinado sugar can also be used instead of brown sugar. Pulse it before adding
