Weekday lunch combo- Spinach dal, potato fry,thokku
Meal preparation
To chop
- Small onion, tomato, spinach, and garlic for spinach dal
- Roughly chop potatoes for potato fry
- Peel Small onion for thokku
TO SAUTE
- Temper mustard seeds and fenugreek seeds. Saute Small onions in sesame oil till they change color. Add tamarind and cool
TO GRIND
- Pulse, sauteed ingredients for onion thokku
Cook
- Cook rice
- Toor dal, moong dal, masoor dal with water, turmeric powder, and green chilli for spinach dal
- Potatoes for potato fry

spinach dal

Saute onion and garlic till onion turns translucent

Add tomatoes, turmeric powder, and salt; mix well

Furthermore, Add spinach and mix well

add sugar and green chilli; saute for around 2 minutes or till tomatoes slightly turn mushy

Furthermore, add cooked dal, water, ginger powder, and salt; mix well and boil for 5 minutes

turn off the stove

In a small tadka pan add ghee and when the ghee is hot add mustard seeds, and cumin seeds; let them splutter

Turn off the stove and add asafoetida and Kashmiri red chilli powder; give a quick mix

Transfer the tadka to the pappu and turn on the stove

Cook for 4 minutes; mix well in between

Finally, add sesame oil and turn off the stove

Potato fry
- After the pressure is released naturally, strain the potatoes in a colander and run cold water
- Peel the potato and roughly chop them
- Do tempering and saute potato on low flame

ONION THOKKU
- Do tempering and add chilli powder; mix well
- saute ground onion, salt and oil; cook till thokku turns thick
- Add jaggery mix well and sesame oil; cook till oil oozes out
