Thogayal | thuvaival variety 

When it comes to Thogayal varieties most of the Thuvaiyal varieties we do in our homes will have a blend of vegetable, lentil, coconut, and spice. Compared to the chutney variety Thogayal are thick. Tempering is optional for thogayal   Many Thuviyal varieties are prepared in  Tamil Brahmin cooking. Thogayal varieties are usually less time-consuming.

nellika Thogayal is a tasty amla-based Thogayal recipe. You can use fresg or frozen.

WHY FROZEN GOOSEBERRY?

Here in the US, I don't often get fresh Amla hence I started using Frozen Amla. Frozen gooseberry still has all the nutrients

SHOULD I THAW GOOSEBERRY?

No, you can directly steam the frozen amla

HOW ELSE CAN I COOK GOOSEBERRY?

I prefer cooking gooseberry in an idli pan but you can cook Amla in a pressure cooker or instant pot. Use a separator and add little water for cooking. You can also microwave gooseberry.

What tastes best with amla thogayal

gooseberry chutney, rice, and sesame oil (or melted ghee) taste best. Thogayal varieties are also a great rice accompaniment with Rasam varietiesMilagu Kuzhambumarandhu kuzhambuPoondu Kuzhambu, or any tamarind-based Kuzhambu variety. I also like vengayam thuvaiyal with curd rice and curd semiya. You can also add water and serve it as a chutney wittiffin varieties

Can I skip tamarind?

Tamarind enhances the nellika thogayal flavor. I would recommend using very little soft tamarind, nellikai is already sour so avoid adding more.

 

Can I use the same recipe and prepare amla chutney?

Yes, add extra water and grind chutney. Also, temper urad dal in coconut oil and add it to thakkali chutney. Other chutney varieties in TMF.

Steam cook

150 grams nellikai | Amla

Saute

1 teaspoon peanut oil

½ teaspoon coriander seeds

4 pepper

2 tablespoon urad dal

4 red chilli

Small piece ginger

Nellika thuvaiyal

Small pieces Tamarind

¼ cup Coconut 

required salt

Temper

1 tablespoon sesame oil

½ teaspoon mustard seeds

Chilli powder

How to make nellikai thuvaiyal with step-by-step pictures:

Steam cook nellikai

  • First steam cook nellika for 8 minutes; cool and keep aside

Saute

  • add oil to the pan and heat

  • Add urad Dal, coriander seeds, pepper and red chilli; roast till they change color

  • Furthermore add ginger; roast till Dal turn golden brown

  • Turn off the stove 
  • Transfer and cool

  • Add coconut; mix well and cool

Grind thogayal- Mixie or blender

  • First grind Dal mixture

  • Add coconut grind again 

  • Furthermore deseed and add nellikai, salt and water;  grind

Thogayal

  • Add oil and heat

  • Furthermore add mustard seeds and splutter

  • Add asafeotida, chilli powder , ground mixture and tamarind;mix well and cook for 2 minutes

  • Add extra water and grind into a smooth chutney
  • Finally add coconut oil and temper mustard seeds, urad dal, and hing; add it to the chutney
