As the name suggests, this mor kuzhambu is cooked without any vegetables and without grinding (no coconut).
Mor Kuzhambu recipe
I love curd-based recipes and have posted many yogurt-based recipes in TMF. When it comes to Mor kuzhambu variety, I usually prepare a version with ground coconut-like Vendakkai mor kuzhambu, mambazha mor kuzhambu, paruppu Urundai Kuzhambu, thenga aracha Kuzhambu. This Pachai Mor Kuzhambu recipe is without coconut.
Pachai Mor Kuzhambu
I learned this South Indian Pachai mor kuzhambu recipe from my mother-in-law. Every family has its own way of cooking. This particular version of Pachai Mor Kuzhambu is prepared without any vegetables. In our home, we usually pair it with Idiyappam. I also like making this instant Kuzhambu when I feel like eating Instant Mor Kuzhambu. It is also perfect when we are out of veggies.

Can I add vegetables to Spiced buttermilk curry?
Traditionally, in our home, it is prepared without any veggies but yes, you can add any veggies of your choice to the Kuzhambu.
Can I grind coconut for Moru curry?
Ideally, as the name suggests, this Mor kulambu recipe is prepared without grinding coconut or any other ingredient. It is almost a cooking recipe, as the only cooking we do is tempering
Can I prepare pachai Mor Kuzhambu as a rice accompaniment?
Yes, Pachai Mor Kuzhambu with Paruppu Rasam, potato fry / seppankizhangu fry / beans Paruppu usili is our family favorite combo.

Ingredients
- 1 cup Thick curd or plain yogurt
- 1/2 cup Water
- Salt as needed
- 1/8 teaspoon Turmeric powder
- pinch Ginger powder
- 1/4 teaspoon Coriander powder
- pinch Fenugreek powder
- 1 teaspoon Coconut oil
- Few Curry leaves
- 1 green chilli
- 1/2 teaspoon Mustard seeds
- 1 Red chilli
- pinch Asafetida
Instructions
- Take 1 cup of thick curd and add 1/2 cup of water
- Blend well with a whisk or ladle to make a frothy thick buttermilk
- Add required salt and mix well
- In a small tadka pan add coconut oil and the oil turns warm add mustard seeds and let them splutter
- Add curry leaves, red chilli, green chilli and let them temper and turn off the stove
- Furthermore add turmeric powder, coriander powder, fenugreek powder, ginger powder and hing
- Add the tadka to the kuzhambu and pacha mor Kuzhambu is ready

Notes
- For extra flavoring can saute shallots and garlic, add them to the kuzhambu
- If you prefer a watery kuzhambu use a 1:1 ratio of thick curd to water
- Avoid cooking the spice powder for a long time as it might turn bitter
- if you don't have fenugreek powder, you can add fenugreek seed while tempering
- Coconut oil gives a nice flavor to the kuzhambu so preferably use it for the kuzhambu
- Adjust the chilli according to your spice
- Ginger powder can be added along with other powders
- For yellowish kuzhambu add extra turmeric powder
