    Chocolate fudge recipe

    I love simple recipes like this that use minimal ingredients and don't involve a lot of cooking. I like condensed milk as it makes cooking super easy and tasty. If you have a sweet tooth like me this 3 ingredients Christmas fudge recipe will be your favorite. Put everything into the bowl, microwave, and then stir yes the fudge mixture ready. All have to do is transfer into a tray, cool, and cut- chocolate fudge recipe is ready😊

    Can I cook chocolate fudge on the stovetop?

    Yes, you can prepare these 3 ingredients fudge recipes on a stovetop. Cook till chocolate melts. You can also double boil chocolate.

    Can I use Dark chocolate?

    My kids have sweet tooth so I prefer using semi sweet chocolate chips. If you prefer mild sweet fudge use Dark chocolate.

     

    Can I use chocolate chunks instead of chips?

    Yes, you can use chocolate chips or chocolate chunks, or grated/chopped chocolate. I used entire 11.5 oz semi-sweet chocolate chips for this recipe. Chunks of chocolate use the same measurement.

    Why room temperature condensed milk for fudge?

    when I experimented for the perfect fudge I realized condensed milk kept in the fridge turns slightly thick. If you are using room temperature (flowing condensed milk) from the pantry, use a 3/4 cup for one 11.5 oz pack. This gives the best fudge. If you are planning to use the condensed milk from the fridge, use the entire can.

    Always big microwave dish

    It is always recommended to use the big microwave-safe bowl as chocolate might bubble while cooking and it is safe to use a big bowl. I always use pyrex glass and it works perfectly.

    Does a metal spoon really give a difference with the consistency?

    I feel a metal spoon works best for fudge when compared to a wooden spoon.  I would highly recommend using a metal fork or spoon.

    Soft ball stage cooking for chocolate fudge?

    The cooking time may vary slightly depending on your microwave setting. Cook just till the chocolate is completely melted. Drop a small portion of the Fudge mixture into a glass containing cold water, if you can easily form a soft ball then the fudge mixture is in the right stage. If you don't cook till the chocolate is completely melted or soft ball stage fudge will turn chewy. Overcooking might result in a hard ball which will give a hard fudge.

    Can I cut the chocolate fudge immediately?

    No, fudge needs to cool for at least a few hours until it turns firm. Cut then refrigerate for 4 hours to set. After that, you can keep it at room temperature or fridge.  I generally keep choco fudge at room temperature. If you are storing in the fridge make sure you keep it at room temperature for a few hours before serving

    Can I add dry fruits or nuts to be fudge?

    Yes, follow the base recipe and play with your flavors. If you feel chocolate fudge is sweet use cranberry, black raisins to balance the flavor. You can also use almonds or other nuts like butterscotch fudge. Caramel sauce or some fruit glaze can also be added.

    Why my fudge is not set?

    To make a perfect chocolate fudge

    • Always use fresh chocolate chips
    • I prefer using room temperature  condensed milk as it is slightly runny 
    • Cook the fudge to the right consistency and always cut only after it turns firm.
    • Consume the fudge after 12 hours for the best result.

    Chocolate fudge

    3 ingredients microwave fudge recipe

    Ingredients

    • 1 can Condensed milk
    • 11.5 oz semi chocolate chips
    • 1/2 teaspoon Vanilla extract

    Instructions

    • Line an 8* 8 square pan with parchment paper that covers the sides of the pan. Grease with little ghee/ butter
    • Add condensed milk, chocolate chips, and vanilla extract, in a large wide  bowl and microwave for one minute
    • Use a metal spoon and mix well. Allow the heat to melt the chocolate chips
    • Furthermore microwave for 30 seconds.  use a metal spoon and mix well
    • Check if chocolate is melted, depending on your microwave  setting you might have to microwave for additional time
    • Microwave till it turns lump free and soft ball consistency
    • Quickly transfer the mixture into the prepared pan and spread evenly
    • Let the fudge sit at room temperature for 3 hours till fudge turn firm
    • Grease the knife with butter/ghee
    • Unmold the fudge and cut it into  pieces
    • Refrigerate for 4 hours then keep the fudge at room temperature and consume at least after 6 hours

    Notes

    1. You can add sprinkles
    2. Cranberry, raisins, or any nuts of choice can be added
    3. Use condensed milk stored at room temperature for best results
    4. Avoid cooking the condensed milk- chocolate chips for a long time as it will affect the fudge texture
    5. Also, cook till the chocolate chips completely melt, else fudge won't set
    6. Cut the fudge only after it is well set/ firm
    7. After cutting the Fudge always keep the fudge overnight or for 12 hours and then consume for the best texture
