Fruit cake is very popular in Indian bakeries, tea Kadai, Potti Kadai, etc. Milka wonder cake (fruit cake) and Britannia fruit cake are my favorites

Beginners friendly Tutti frutti cake

Eggless sponge cake with tutti frutti, since tutti frutti is the key ingredient for the cake. Tutti fruits are candied fruits. In India, they are colored bits of raw papaya. I have also seen tutti frutti with watermelon rind. In India, it is widely available in all grocery stores. Here in the US, I would recommend buying them in Indian stores. The one available in other regular grocery stores has additional flavoring which might influence the taste.

What kind of flavors can I use for Eggless tutti frutti cake?

I love the tutti fruity cake we get in our local bakery so I made it in that flavor. You can add a lemon set of orange zest if you like citrus flavor. Some tutti frutti mix comes with the citrus peel you can use it too. Spice powders like Cinnamon, cardamom, nutmeg, etc can be used for extra flavoring. I have used pineapple essence for this recipe instead you can use vanilla extract, rose essence, or any other flavors of your choice.

Can I add other dry fruits/ nuts to this cake?

Yes, you can add dry fruits/nuts of your choice. Refer wheat dry fruit cake for a healthy version.
