    Eggless Tres Leches Cake

    Tres leches cake | Eggless Tres Leches cake recipe | Best Milk cake |  Milk cake | Mexican cake | Best Eggless Tres Leches Cake is simply moist, best vanilla cake without butter, eggs, vinegar, lemon juice. Rich and tasty Tres Leches Cake is made with spongy vanilla cake soaked in 3 types of milk (evaporated milk, condensed milk, and heavy cream) and frosted with whipped cream frosting. Bakery-style Mexican cake is one of the quickest and can be made even by a beginner without any hassle. The 7-inch cake is perfect for any small event/ birthday party/ special occasion

    Tres Leches cake

    Tres leches cake is a sponge cake soaked in three kinds of milk: evaporated milk, condensed milk, and heavy cream. Tres leches came is popular in Central, North and South America, Caribbean, canary islands, Albania, North Macedonia, turkey, and some other parts of Europe. In Puerto Rica tres leches cake is served with whipped cream frosting. In some other countries, it is topped with caramel.

    Can I use wheat flour instead of all-purpose/flour?

    For a light and soft cake, all-purpose flour is preferred. Using wheat flour might result in dense cake and soaking might be perfect. If you prefer to use wheat flour choose fine ground flour and add an extra 2 or 3  tbsp of water.  Use a generous amount of milk mixture to make it moist.

    Can I use butter instead of oil?

    Yes, oil can be substituted with melted unsalted butter but as I told you in my Eggless white forest cake and Eggless chocolate cake oil makes the moist cake. We have to refrigerate the cake for at least 1 day for milk to soak well and keep it refrigerated till you finish the cake so use flavorless oil for the best tres leches cake.

    For Tres leches cake  I make a chocolate cake and soak it in milk? 

    Traditionally sponge vanilla cake is used but if you prefer chocolate flavor try my eggless chocolate cake recipe and soak in milk.  Instead of two 6 inch pans, you use one 7 inch pan.

    Can I double the recipe and make two layers of Tres leches cake?

    Yes, You can double the recipe and prepare cakes in two 7 inch springform pans but soak both layers separately in a milk mixture refrigerate. After both layers are well soaked assemble the cake. 

    How can I adopt the recipe for other cake pans?

    I have used a 7-inch cake pan. You can use the same proportion and split it into two 6 inch pans. Double the recipe for 9-inch tres leches cake. 

    Do I need a cheesecake pan/springform pan for Tres leches cake?

    Cheesecake pan is optional for Tres leches cake but after soaking the cake in milk mixture it is easy to unmold the cake from springform. If you are using the regular cake pan use a cling wrap before soaking the milk mixture for easy unmolding.

    Eggless Tres Leches cake

    Ingredients

    • All-Purpose Flour -1 + 1/3 cups
    • Granulated Sugar -3/4 cup
    • Baking Powder-1/2 tsp
    • Baking Soda-1 tsp
    • Salt-a pinch
    • Milk-3/4 cup
    • Oil-1/2 cup
    • Sour cream/ Curd-1/2 cup
    • Vanilla extract -1 tsp

    Three Milk glaze:

    • Evaporated milk - 3/4 cup
    • Condensed milk - 8 oz
    • Heavy cream - 3 tbsp

    Frosting:

    • Heavy cream - 1 cup chill
    • Confectionery sugar - 1/4 cup
    • Vanilla instant pudding mix - 2 tbsp
    • Vanilla extract - 1/4 tsp optional

    Instructions

    • Preheat oven to 355°F or 180°C
    • Take a 7-inch round springform pan and line it with parchment paper and grease with cooking spray or oil
    • In a wide mixing bowl add flour, baking powder, baking soda, sugar, and a pinch of salt; combine everything well with a whisk or fork
    • Make a dent in the center and add sour cream, oil, milk, and vanilla extract to the center., mix just until all the ingredients are incorporated; avoid over mixing
    • Over mixed batter yields a dense cake
    • Add the batter into the prepared cake pan and tap the pan twice
    • Bake for 30 - 40 minutes or until a toothpick/skewer inserted comes out clean
    • Cooldown the cake for 10 minutes and carefully flip the cake on the rack, remove the parchment paper, and allow the cake to cool completely

    How to make Three milk glaze:

    • In a deep glass mug add evaporated milk, condensed milk, and heavy cream; mix well

    Add Milk glaze :

    • Keep the cake back on the 7-inch springform pan
    • Place the springform pan on a wide plate or 9 inch or big cake pan
    • Use a skewer and make holes all around the cake
    • While making holes make sure the skewer goes all the down so that the cake gets well soaked in the milk and pour a generous portion of milk glaze on the entire cake
    • Make sure you add the glaze around the curves and rest it for 10 - 15 minutes till the milk mixture is well absorbed on the cake
    • Repeat adding the milk glaze in batches
    • After all the milk get soaked well sometimes you might see a little portion of milk on the plate
    • Pour it again on the entire cake
    • Cover the cake with a cling wrap and refrigerate the cake for at least 10 hours or overnight
    • The next day Milk glaze gets well absorbed in the cake
    • How to make stiff Whipped cream frosting:
    • In a wide vessel add chill heavy cream and beat it well on medium speed until you get soft white peaks
    • Add confectioners' sugar, instant vanilla pudding mix, vanilla extract and mix gently until everything is combined well. Our Whipped cream frosting is ready

    Assemble the cake

    • Take a cake stand and place the springform pan and unmold the pan
    • Transfer the frosting into a piping bag and frost according to your preference
    • You can also melt chocolate and write on top of the frosting. This is a 9-inch Eggless Tres Leches that I made by doubling the recipe.

    Notes

    1. The amount of frosting differs based on the way you frost the cake. If required make one more batch of frosting
    2. If preferred you can make Tres leches cake for a two-layer cake. Make milk glaze for two layers separately after milk glaze is well absorbed  add the frosting
    3. The same measurement can be baked in two 6 inch cake pan
    4. I have used a Cheesecake pan so it was easy for Tres leches cake. If you are using a regular cake pan add a layer of cling wrap before adding the milk glaze for easy unmolding of the cake after the glaze
    5. You can double the ingredient measurement for a 9-inch cake
    6. I have used instant vanilla pudding mix hence I added a little vanilla extract but if you are using plain instant pudding mix-use 1 teaspoon of vanilla extract
    7. You can add some cherries or strawberries on top of the cake
    8. Chocolate writing can be done on the chill cake
    9. I preferred piping my frosting so added pudding mix. You can skip if you prefer simple frosting
    10. Always use chill heavy cream for whipping. Avoid room temperature heavy whipping cream
    11. Add frosting only after the milk glaze is well soaked on the cake
    12. For rich milk, glaze use heavy cream but If preferred you can use whole fat milk like my Tres leches cake
    13. Overnight refrigerating is necessary for the milk glaze to well absorb on the cake if you try to frost the cake within a few hours after adding milk glaze cake might drip down the milk while cutting the cake

    Eggless Tres Leches Cake - 7-inch cake pan | Springform pan 

    Ingredients:

    All-Purpose Flour -1 + 1/3 cups

    Granulated Sugar -3/4 cup

    Baking Powder-1/2 tsp

    Baking Soda-1 tsp

    Salt-a pinch

    Milk-3/4 cup

    Oil-1/2 cup

    Sour cream/ Curd-1/2 cup
