Kalyana sweet pachadi recipe | Mixed fruits pachadi | Pazham pachadi | Sweet pachadi | fruits pachadi is one of the common sweet pachadi widely served in Tamil Brahmin wedding. Tasty South Indian pachadi is prepared with mixed (seasonal) fruits. Pachadi is easy to prepare and makes any feast extra special. Fruits pachadi is also served for Onam sadya. I love Saravana Bhavan style fruits pachadi.

What kind of fruits should I use for pachadi?

Typically mixed fruits pachadi will contain apple, banana, and grapes. Fruits like Pineapple, pear, mango plum extra can be added for fruits pachadi. Add any seasonal fruits of your choice for a tasty mixed fruits pachadi

Can I skip Sugar for Kalyana sweet pachadi?

Traditional white sugar is added for the Kalyana pachadi. For a healthier version, you can use brown sugar, jaggery but the taste might not be similar. If you prefer using honey, add very little sugar and cook the fruits, switch off and add honey

Should I cook sugar to one string consistency?

Yes, it is important to cook the sugar syrup to one string consistency. If the sugar syrup is just boiled then pachadi will become runny.

Can I use food color?

Yes, you can use food color for the pachadi and makes it colorful. In our home, we like Kalyana fruits pachadi  without any food color so I skipped it

Shouldn’t we sauté Cashew and raisin?

For Kalyana Fruits pachadi sauteeing cashew and raisins is optional. It tastes best even without that. If you prefer cashew and raisins can be sautéd in ghee and added to the sweet pachadi

Ingredients

  • Apple - 1 chopped
  • Banana - 1 sliced
  • Grapes - 3/4 cup
  • Sugar - 1/2 cup
  • Water - 1/4 cup
  • Whole cashew - 7 slit
  • Raisins - 1 tbsp
  • Dates - 3 pitted (roughly chopped)
  • Cardamom powder - a pinch optional

Instructions

  • In a pan add sugar and sauté in low flame for 30 seconds
  • Turn the flame to medium and Pour 1/4 cup of water and mix well
  • Let the sugar melts and boil well
  • After the sugar boils well start checking for one string consistency. Carefully take a small portion of syrup in between your fingers. If the syrup comes like a string then the syrup is in the right consistency
  • Turn down the flame to low and add dates; mix well
  • Add cashew , raisins and mix well
  • One by one add fruits, first add banana, mix well. Then add apples, mix well and finally add grapes
  • Add cardamom powder and mix well
  • Turn up the flame to medium and cook for 3 minutes
  • In a ladle take a small portion of the syrup and add rice flour; mix well and add it to the pachadi
  • Cook for a minute till everything comes together; switch off
  • Transfer it to serving bowl and let it rest for atleast 2 hours before serving for the flavors go well incorporate

Notes

  1. You can add any fruits like pineapple, pomegranate, guava,mango or any seasonal fruits if your choice
  2. Pineapple us one preferred fruit for fruit pachadi but I  didn't have it I skipped
  3. Always prefer rioe fruits for the pachadi
  4. Rose essence, pineapple essence, edible camphor can be added for extra flavor
  5. If desired add food color
  6. Avoid closing the pachadi while it is hot, it might make the kalyana sweet pachadi watery
  7. Adding rice flour is optional for the pachadi but it gives nice texture to the pachadi
  8. Always cook the sugar syrup to string consistency else fruit pachadi won’t hold well
  9. Dry fruits of your choice can be added for extra flavor
